So I thought I'd do another food post, this time being chicken Tacos!
Chicken Seasoning Polo
NEED TO BE IN A BLENDER TOGETHER: Long green onions, garlic, lemon (whole lime), salt, oil, water, and cilantro.
Did someone say tacos 🌮? 😍
🌮 Slow Cooker Chicken Tacos 🌮 .
✔️ 1 cup low-sodium organic chicken broth
✔️ 4 cloves garlic finely chopped
✔️ 2 medium jalapeño peppers seeded and deveined, chopped (optional)
✔️ 2 Tbsp. chili powder
✔️ 2 Tbsp. ground cumin
✔️ 2 tsp. ground smoked paprika
✔️ ½ tsp. sea salt or Himalayan salt
✔️ 2 bay leaves
✔️ 1 lb. raw chicken breast boneless, skinless
✔️ 8 (6-inch) corn tortillas warm
✔️ 1 cup pico de gallo or fresh tomato salsa
✔️ 1 medium ripe avocado sliced
✔️ 1 medium lime cut into 4 wedges
✔️ ¼ cup finely chopped fresh cilantro
1. Place chicken broth, garlic, jalapeños (if desired), chili powder, cumin, paprika, salt, bay leaves, and chicken in a 3-quart slow cooker; mix well and cover.
2. Cook on high for 2½ to 3 hours (or on low for 4 to 5 hours), or until chicken is tender.
3. Transfer chicken to a cutting board and shred with 2 forks.
4. Evenly divide chicken between 8 tortillas.
5. Top evenly with pico de gallo, avocado, lime juice, and cilantro; serve immediately.

We recently incorporated our favorite family meal into camping and it was just as good, if not better, than enjoying it around a transitional dinner table. Although it didn’t involved any wild game, it was randomly paired with a beautiful half pounder that my nephew caught 🐟The only prep was cooking and shredding the chicken prior to leaving home which held up just fine in the new cooler (thank you @otterbox) This chicken taco recipe, with chipotle in adobo sauce, Mexican crema, cotija cheese, lime, tomatoes mix and cilantro, is quite possibly the best combination of flavors evaaaaaa 🙌🏼 and justifies all of those fireside Coronas that always seem to get packed with the tent 💃🏼🍻 Just in case you don’t believe me 👇🏼👇🏼👇🏼👇🏼👇🏼
4 chicken breasts cooked and shredded
1 can of chipotle in adobo (blended)
2 small cans of Nestle Mexican Crema
Cotija Cheese grated ghetto style with a fork right out of the package
ROTEL or similar canned tomatoes in chunks
Lime slices fa dayyyyysss
Then fry up some tortillas in a dirty camping pan and consider dinner done ✅

After chizza, it’s another news-splashing innovative dish from KFC in a rather short time. I wonder how #chickentacos work.... The answer: they use deep-fried chicken fillet as the 🌮 wrap 👌

A night at home with no football and no place to be means home cooked meal! Cooked this chicken in crockpot with low sodium chicken broth, tacos seasoning, and ranch seasoning. I had mine with no tortilla or sour cream but extra lettuce and avocado. (Kids had 2!) So yummy!
We have been eating on the run so much with our crazy schedule. Time to get back to healthy eating and drop these 5 summer pounds! Transformation challenge begins on Monday and I’m ALL IN with my team! Lots of meal ideas we can share to help each other.
