Instant Pot teriyaki lime chicken over rice for dinner tonight. (Recipe from wholesomelicious.com)
1/2 chopped white onion
2 lbs chicken breasts
1/2 cup lite soy sauce
1/3 cup honey
Zest and juice of 1 lime
1/4 cup Apple cider vinegar
2 minced garlic cloves
2 TBS tomato paste
Set Instant Pot to saute mode and add a little Olive oil. Cook onion til soft. Mix all sauce ingredients together. Place chicken breasts on top of onions and pour sauce over chicken. Poultry button for 15 mins with a 12 min natural release. Remove chicken and shred it. Hit saute button and add 2 TBS cold water+2 TBS corn starch to pot. Mix til sauce thickens. Add chicken back to pot. Serve over rice
Tonight’s bowl is brought to you by #leftovers ! Instead of rice I used some steamed barley, which is actually a really good (and healthy) replacement. From the top: steamed barley, hot sauce marinated grilled chicken, black bean mash, fresh avocado, and salsa.
I find that these “taco bowls” are so adaptable. Basically any protein combined with some veggies, either rice/ quinoa/ barley/ couscous = a hearty dinner.
Nothing fancy tonight just a good ole naked chicken burrito bowl faijita style using some my personal rub that we use on most of our dishes. Some really good eats and definitely nice family staple meal. Thank you all for your continued support, means a lot! .
