Flatbread pizza is one of my obsessions. I sometimes dream about it all week and can't wait for Friday or Saturday to treat myself. 😉 Usually, I go for the regular flatbread, but there is an easy way to make gluten free flatbread. Here it is:
1 cup potato flour
1/2 cup coconut flour
2 cups full-fat coconut milk
1/2 teaspoon salt
Preheat the oven to 350 degrees.
Put all ingredients in a medium bowl and mix together well. On two baking sheets lined with parchment paper, flatten out the dough in the sizes you prefer. (2 large or 6-8 small) Use your hands to shape it into a circle or whatever shape you prefer.
Sprinkle with olive oil, sea salt, roasted tomotoes, basil and @miyokos_kitchen vegan cheese.
Bake in the preheated oven for 20 minutes, or until the sides are golden brown and the top is starting to turn golden brown. Enjoy!
Cheesy Salsa Verde Chicken with Cauliflower Rice. You can make this with regular chicken, I just like the taste of this with the blackened rotisserie chicken. This is quick and easy. This is also a great crockpot recipe with chicken breast.
Dinner tonight is a puff pastry pizza, one of my favourite quick and easy meals to make!
✨ I just used a ready made puff pastry sheet then added tomato paste mixed with vegan cream cheese for the base and added cherry tomatoes, mushrooms, courgettes, onion and topped with rocket leaves after cooking!
