The first day of summer calls for a cold corn salad for book club tonight. It’s easy to make the day before and serve cold the next day.
BBQ corn on the cob, cherry tomatoes, feta, red onion, cucumber and basil from my garden. 🌽🍅🥒 I mixed in salt, pepper and a very small amount of olive oil and apple cider vinegar to give it some added flavor. Delicious 😋
