‘A Night in a Ballroom’. @CocktailProfessor designed this cocktail for @St.RegisShenzhen. It is inspired on the ‘Scent of St. Regis’, a parfum reprises a night in a ballroom during a magical evening, designed by scent designer @arquistecarlos exclusively for @stregishotels. We translated this concept and aromas into a cocktail which resulted in a floral elegant drink with hints of white roses & quince blossom, a bit dryness & bitterness of the fresh grapefruit and some tropical aroma in the nose.

It’s fresh, it’s delicious and it’s beautiful.
I remember this dish coming out of our tired brains like a gift. Close to touching the 60th day of charter in a row, we were running out of ideas. Considering that we were preparing 16 different dishes per day, we needed a new match for one of the boss’s favorite ingredients.

Well as you guys can see we definitely made it.
@ryanjaymc spoon his amazing smoked eggplant caviar on the bottom of the plate and the burrata was just perfect on top of it.

Fino a qualche mese fa non mangiavo i ceci e quando qualcuno mi chiedeva il perché, la mia risposta era sempre la stessa: non mi piacciono, hanno una consistenza strana. 
Era un rifiuto che avevo creato probabilmente nella mia infanzia e rinforzato nell’età adulta, perché i ceci non credo di averli mai mangiati e quindi come facevo a sapere che non fossero buoni? Avrò sognato da piccola l’uomo cece cattivo? Chi lo sa!😅
Allora un giorno dopo tanti no, mi sono detta “perché no”?🤔
Ho preso i ceci cotti da mia mamma, li ho fatti saltare in padella con l’aglio, l’olio, ho aggiunto l’acqua e li ho fatti cuocere ancora un po’, poi ho aggiunto le bietole e una volta cotte ho aggiunto il tutto a degli spaghetti non completamente cotti. Ho fatto assestare il composto sul fuoco per qualche minuto assicurandomi la cremina, ho impiantato e aggiunto semi di zucca tostati, un filo d’olio crudo. Dopo questo piatto i ceci sono entrati di diritto nella mia vita 😄
