I wanted to cook something thoughtful and nurturing for my mom’s first dinner back from the Philippines at my place. So I decided to make her soup and noodles. The warmth of the soup represents the love and the care she will be giving Cole. The noodles represents long life so she can be around for a long time to be with us. -Soba Buddha Bowl with grilled chicken, mushrooms, picked carrots, heirloom cherry tomatoes, bokchoy, cilantro, scallions, thai basil and ponzu vinaigrette -Miso Shrimp soup with seaweed, asparagus, edamame, tofu and scallion oil.

75g Cream cheese
1 White onion finely diced
3 garlic cloves crushed
300g Sandrea risotto rice
100 ml white wine
1/4 of a squash diced into small chunks
75g parmesan grated

It took me almost 3 weeks to make this and I am delighted with results.
What do I call it? I am still not sure! Ribeye pastrami may be the closest name to it! I started with a gorgeous slab of meat from my trusty butcher and then an adventure to get hold of some #cure1 which allowed me to meet the fabulous Oskar Butcher in Christchurch. Then a whole 10 days of brine, a hit of smoke, a sous vide session and a finish in the oven and ta daaaaaa here’s my baby!
