The snow ❄️ sure is pretty, but I am looking forward to sunny & snow-free days ☀️. This girl 🙋🏻♀️ has a big case of cabin fever 😂. I know it has only been two days 😂, but my gypsy heart can’t take it 😂. In the mean time, I am enjoying a mini cheese plate and a Blood Orange @eastciders while I admire the Carolina snow ⛄️.
Make sure to reserve a wheel of this beauty before your cheese shop runs out! Rush Creek Reserve is a hot ticket, once a year, ooey gooey treat that you have to get your hands on. If you’re a fan of Harbison or Vacherin Mont D’or then you’ll love this spruce wrapped cheese. Made only between the months of September to November, this cheese only uses raw cow’s milk that is pumped in the evening.
I found this cheese to be surprisingly resin-y with hints of smokiness. Whereas Harbison is reminiscent of bacon, Rush Creek reminded me more of turkey bacon in that it was more mild than the PUNCH of bacon you get from Harbison. I baked my wheel at 400° for five minutes and wow, what a way to treat your cheese for a truly luxurious experience. Pair with some Al Green and try not to think about how you’ll have to wait a year before its released again.

1 small wheel of Brie
.• Unroll crescent rolls out flat. Place the Brie in the middle then wrap up pulling corners to Center. Bake at 350 for 30 minutes. Enjoy!🥐 •

Was feeling a little sorry for myself, having come down with a cold on my day off (and missing a shindig tonight as a result) - UNTIL I remembered that there was leftover party food in the fridge. Happy days.
Christmas cheese course sorted! 😋🧀💥 This is rosemary baked Camembert de Normandie with candied walnuts, roasted honey figs and roast garlic - sooooo good. So pleased I finally got to use my Camembert plate and magnet in a shot 🤣
Serves 2-4 (depending how greedy you are 😏)
250g wheel of Camembert de Normandie
1-2 bulbs of garlic
Large handful of shelled walnuts
Heat an oven to 180C 🔥
WALNUTS: sprinkle with a little water then toss in some sugar. Lay on a roasting tray and bake in the oven for 5 mins or so - keep an eye on them, don't let them burn 🌰
FIGS: At the same time, score a cross into the tops of the figs, squish down the sides to expose the insides, nestle in a small roasting dish, drizzle with some honey and pop in the oven for a few minutes. They're ready when soft 🍯
GARLIC: Slice the tops off the whole bulbs, nestle in a small roasting tray/ foil, drizzle with olive oil, pop in the oven for 10-15 mins or so until the cloves are soft and can be squeezed out 🤤
CHEESE: Remove the box lid and the plastic covering of the cheese, but keep the cheese in the wooden box. Score across the skin, brush a couple of rosemary sprigs with olive oil and poke through the top. Bake in the oven for ~ 10 minutes until the inside is gooey 🧀
In the meantime, toast your sourdough slices. To eat, smoosh soft garlic and fig onto bread, spoon over a load of runny cheese and enjoy with the sweet walnuts. Real life HEAVEN ✨
