I can’t believe these two will both be going for a full day of school in just a couple weeks! Except for Dot starting a half day in April, I have spent the last 5 years of my life with at least one of them at home with me.
I am so excited for this new chapter, but of course feeling a little sad that my babies are growing up! 😩However, this does mean that this mom will have more time for herself. 💃💃 What that looks like for me is more time for workouts, meal prepping and grocery shopping, working part time on my coaching business, and part time at the Holistic Chiropractor’s office, and maybe even a lunch date here or there 😍❤️. 🌮CHICKEN ENCHILADAS!! 🌮
2 lbs ground Chicken(cooked)
15 oz can of black beans, drained and rinsed
4 oz can of green chilis, drained
8 oz can of diced tomatoes, drained
3/4 cup plain Greek yogurt
2 tsp Southwest seasoning
10 corn tortillas
1 jar good quality enchilada sauce (check ingredients, I used some from Aldi's)
Preheat oven to 350.
Combine chicken, beans, chilis, tomatoes, yogurt and seasoning in a large bowl. Heat tortillas in the microwave before assembling. Add chicken mixture to each tortilla, roll up, and place in baking dish seam side down. Pour enchilada sauce over enchiladas so that all of the tortillas are covered. Sprinkle evenly with cheese.
Bake for 30 minutes.

40g light cheese (a choice)
1/2 small tin of baked beans

This is amazing. We don’t mess around with pizza in this house... homemade pesto (thank you @kristinkai) and Brie cooked on a cordierite pizza stone at 550 degrees. So fucking good.

I made this taco 🌮 salad 🥗 in 15 minutes (including cooking the meat)
So filling with lettuce, ground meat (beef, chicken, turkey whichever you like) with taco seasoning and then toppings of your choice!
I like tomatoes, green olives, cashews for a little crunch, and a little cheese 🧀
Because cheese is life of course 😂
Top that with some salsa and dinner done ✅
Change it up and add some of you favorite topping maybe some avocado 🥑 or fajita peppers 🌶 maybe?

This is a DIY leftover cheese Mac and Cheese recipe! Here are the directions: take all the leftover cheese that you have (I had cheddar, Asiago, gruyere, Swiss, Monterey Jack, fontina), shred it, mix it into cooked noodles with milk, butter, salt, and pepper. Spread it in a pan and add breadcrumbs. Bake till the crumbs are crispy. Feel free to add bacon, squash, or other yummy things you have on hand. Super simple and super cheesy!
I’m actually not supposed to eat cheese.. I have IBS which basically means that dairy is a no go zone.
