Happy Cheese Monday! We don’t have a cheese for you today because we were too busy experimenting with chebureki - a deep-fried pastry filled with ground beef/pork/lamb with onions. Rivals any good cheese if you ask us 😉 but back to the regular cheese programming later this week!

В Хамар- Дабане( в том, что на фото, есть еще второй) просто огромные и вкуснющие чебуреки! Мы с мамой фанатеем по чебурекам с сыром, а Веня с мясом обычно берет. Всем советую, это любовь ❤

In Liepāja we meet Jānis, a photographer with a studio in the middle of the city. It is not a coincidence that this is his profession now. Already in the Soviet time he took pictures when he was in 6th grade of the primary school. Instead of asking 50 kopecks, he asked 20 for making the school pictures.
In the Soviet time it wasn't a common job to be a photographer though. Instead, after graduating, he started working as a cook in a cafe, making chebureki (a deep-fried turnover with a filling of meat). Soon his boss found out that he is good in "creative" administration (The word stealing was not allowed). He found a way to trick the system;
Firstly the cheburek has a certain weight with a specific part of meat in it. They added more onions and bouillon to be able to add less meat.
Secondly he also made his own minced meat and found a way to mix 1/3 of good, expensive meat with inferior meat and grained bones. With adding hot water and graining it multiple times, he managed to make the quality good enough to sell.
The leftover of the expensive meat was traded with imported T-shirts and jeans from another shop in the city. In that time this co-sharing economy was existing next to the official economy.
To profit more from the trick he was moved to a bigger cafe after two months and finally to a big school with hundreds of portions every day.
After explaining his story, Jānis takes us to the cafe where his career started. He hasn't been there for 15 years. The interior still has a Soviet feeling. The same for the owner. She is a bit blunt, but in a heartwarming way.
When Jānis tastes his cheburek, he cant suppress a big, big smile. "This brings me back in the time of my adulthood. The cheburek tastes even better now; there is enough meat in it. Chebureki. Empanada frita de origen turco 🇹🇷 que es muy popular en la cocina rusa. Está hecha de una masa sencillísima: harina, agua y sal, sin levadura. Su versión más tradicional se rellena de carne picada de cordero. Es realmente deliciosa porque es súper jugosa por dentro y muy tostada, dorada y liviana por fuera ya que su masa hace burbujas de aire que la aligeran. El relleno es de carne picada con especias, pero puede tener rellenos de huevo duro, hongos, papas, cebolla, etc.
Si tienen la oportunidad de probarla ¡ni lo duden!
Lo mejor es que esta la probé en un restaurante llamado precisamente "Cheburechnaya" que se especializa en todo tipo de chebureki con infinidad de rellenos. .
