*Just to keep you updated, I also made one with pesto sauce and oh mY LORD– it was amazing...* But seriously the best compliment I’ve been receiving lately from both family & friends, is that the food I cook is amazing... This cauliflower crust pizza in particular is a hot-topic amongst my folks... I’ve gotten ‘em hooked. 🥗🍕 Tonight was my sister’s first time trying it, since she’s rarely home to eat my cooking... and even she loved it! 🥦🍅 I’ve fallen back into my cooking/baking mood, and I’m definitely not opposed to it.. 👩🏻🍳♥️ *It helps to sauté the vegetables beforehand, that way they aren’t too hard/potent. I’ve also been making quinoa on the side & slappin’ it on my slices afterwards*

if cauliflower can somehow become pizza... you my friend, can do anything 🍕if you were peepin’ my stories last night, you know a & i tried out the new cauliflower crust pizza @saucerestaurant and we were so impressed. have you ever gotten cauli crust before and it was soggy & just didn’t hold up alllll the goods atop the slice? 🥦🍅🥕well, this was nothing like that. their cauliflower crust pizza was super delicious, crunchy and to be honest, just tasted like fabulous thin crusted pizza. a major shout out to the wait staff & manager at sauce who completely accommodated my dairy free needs by serving my personal pie (😋) of veggie pizza with no cheese, but an incredibly yummy pesto sauce, in exchange! i love restaurants that are flexible with menu changes 💯 now, did i make you hungry for dinner already!?
*side note - cauliflower is not low fodmap or friendly to those with IBS so I had a smaller portion plus enjoyed the watermelon and stacked salads 🍉🥗 oh and dessert after, can you say yum?!
Cauli crust pizza! @fithamm introduced me to the frozen version so I wanted to try to make it --> Food processor to turn cauliflower into 'rice' (you can buy this too), steam rice, drain and dry (SQUEEZE water out). Mix w eggs, cheese, seasonings and cook 20+ min until brown! Add toppings one at a time, popping back into the oven in between, cut and serve 😊

2 cups of cauliflower rice (pressed)
3/4 cups of almond flour
1 tablespoon of cream cheese
Seasonings (salt, garlic and onion powder)
Using a food process the cauliflower in 1-second pulses until it has completely broken down into couscous-sized granules. Cooked the cauliflower rice on the microwave for 1:30 minutes, let it cool so you don’t burn yourself with its water. Using a cheese cloth squeeze the excess liquid out.
Mix all the ingredients. It gets a bit sticky like a cookie dough, does not look like pizza dough.
Open a piece of parchment paper that is twice the size of the pizza and grease with butter so the dough does not stick (you will sandwich the dough in between the paper). Open the dough with the rolling pin. Do not remove the paper.
Bake in preheated oven at 425F (218C) for 16 minutes, remove from the oven and turn the dough upside down, remove the paper that is on top of the dough (Cooked bottom) and add the toppings (do not overdo on the topping) return to the oven for additional 14 minutes. I usually turn off the oven and keep a little longer.

🍕This is my recipe for “when it looks so good you forget to take a picture-cauliflower pizza”🍕 RECIPE BELOW⤵️. Swipe to see more pictures during the cooking process. .
1 Large Cauliflower
1/4th cup of mozzarella cheese
1 large egg ✨
Using a cheese grater (or food processor if you have one) grate the cauliflower using the small part. Put all your grated cauliflower in a cheese cloth or paper towel and squeeze as much liquid out as you can (this gives the crust a sturdier texture). Add the cheese and egg and mix. Add in seasoning (I used salt, pepper, and garlic powder). Bake the crust at 375 degrees for about 20 minutes or until entire crust is browned (see next picture) ✨
You may feel free to use any toppings you like, but here is what I used...
For the “sauce” I did a little bit of garlic butter and crushed red pepper brushed on the crust. Then I added:
-a little mozzarella -Spinach
-green and kalamata olives
-hard salami -feta cheese
Then baked for another 10 minutes until it was all melted.
CAULIFLOWER PIZZA BASE
May not look the best but so pleased I just made my first cauliflower based pizza 😍💚. Super simple if you don’t mind grating 1/2 a cauliflower 🙌🏼😍. Mix 4 cups of grated cauliflower, 2 eggs, 1 tsp salt, 6 Tbs of Chickpea flour and 1/2 - 3/4 cup of cheese , I used Parmesan and mix. Press down on any baking dish with baking paper and bake for 18-20 mins til golden. Just check part way through so that it doesn’t burn. Top with pizza sauce and your favourite toppings and bake again for approx 8 mins. Serve with wedges and enjoy. Will certainly be making these pizzas again!!!
