1 head of cauliflower
salt to taste
2-3 fresh garlic cloves or 2 teaspoons minced garlic in a jar
1 oz cream cheese
1 tablespoon heavy whipping cream
2 tablespoons butter
1/4 cup shredded parmesan cheese I prefer to use parmesan reggiano
pepper to taste
1 teaspoon chives fresh or dried
Cut the cauliflower into smaller pieces. Do not cut the stems.
Add the cauliflower to a large pot of water. Use enough water to cover the top of the cauliflower. I used about 2 cups and a medium-sized pot. Boil the water. Add salt to taste.
Then cover the pot and simmer for 6-8 minutes or until the cauliflower is soft. I used a fork to poke and test when done.
Remove the cauliflower from the pot, drain the water. Dry the cauliflower completely. I used paper towels.
Add the cauliflower to a food processor or high-powered blender.
Next add the garlic, cream cheese, heavy whipping cream, butter, cheese, and pepper to taste.
Blend until the mixture becomes creamy. You may have to remove the lid and stir the mixture and blend again a couple of times, to get it fully mixed and creamy. You can also use an immersion blender.
Serve the cauliflower mashed potatoes with chives.
Roast Cauliflower with Chorizo and Green Olives
So simple, delicious and light. I prepped this without the oil dressing and kept it in the fridge for a couple of days. Simple to cook, good flavors will make again.

Meal prep for this week. Baked some chicken, roasted some russet and sweet potatoes and paired those with either roasted green beans and carrots or roasted cauliflower and broccoli. I also made some beef and broccoli and paired that with Jasmine rice. So now for at least 4 meals this week, my husband and I don't have to think twice about how we're going to eat healthy with our busy work schedules. We've got it ready 💪 I still haven't been to the gym yet. I'm not sure what I was thinking. I'm still so congested and easily fatigued. Maybe Tuesday is my day back haha .

Have you tried @traderjoes cauliflower gnocchi? I love most things I buy from TJ’s, but this one is worth the hype. Instead of following the box directions, I thaw the gnocchi and pan cook it in olive oil until brown and crispy. SO GOOD!
I’m really into this buffalo chickpea burger’s texture. Yesterday i winged it on a buffalo “chicken” (jackfruit) dip recipe and didn’t love the texture and went a little overboard with the sambal. I mixed the leftover dip with chickpea flour to form a fairly loose dough (the chickpea flour absorbs liquid as it cooks, and acts as a binder) and pan fried until golden brown. Made a quick slaw with shaved carrots, shaved celery, pickled celery, and equal parts goddess dressing & vegan mayo to emulate bleu cheese

Chana masala with turmeric cauliflower and jasmine rice!! The Chana Masala recipe is from @minimalistbaker. For the turmeric cauliflower I sautéd some white yellow and turmeric. Next I added in 2 heads of cauliflower, a 1/4 cup of vegetable broth and some salt and pepper!

More aromatic herbs in a no added fat recipe.
Cauliflower Potato Soup
1 head cauliflower (chopped)
4 lb gold potatoes (peeled + cubed)
1 large yellow onion sliced
4-6 cloves garlic
6-8 cups veggie broth
6-8 sage leaves
6-8 sprigs thyme
4-5 sprigs rosemary
Salt and pepper as desired
Steam potatoes, cauliflower, onion and garlic until tender. Transfer to blender with broth and herbs. Transfer to stock pot, stir and enjoy.
This is a mixture of several online recipes. Since most recipes have added fat or other non food ingredients, I removed and added ingredients to make it my own. Feel free to adjust any ingredient to your liking. I have 2 three quart steamers and fill one with the potatoes and another with the cauliflower, onion and garlic. Then blend in batches, covering the contents with broth and pour into a stock pot. I use filtered water if more liquid is needed.
This makes a large amount of soup (8-10 bowls) so you can easily half it to make less. The extras make a nice gravy or potato topping and tastes even better the second day.
