My first batch of #cashewcheese was a HUGE success, if I can toot my own horn. 🙋🏼♀️I’ve been thinking about the cashew cheese 🧀 from @greenspacecafe since I tried it last April. I felt overwhelmed by the cheese-making process (I thought it would be gross or labor intensive) so I avoided it. I could not have been more wrong! It takes a couple days to make because the cashews must be soaked in water for about 20 hours. Ingredients: cashews, lemon juice and zest, garlic, sea salt, olive oil, garlic powder, Italian spice blend, and dill. Made some more cashew mac & cheese. No animal milk at all. Its the bomb tho. Look, All ya gotta do is soak some cashews overnight, blend em wit coconut milk, in addition to turmeric, black pepper, sweet basil,....I'm not fina give the whole recipe lol. HOMEMADE VEGAN CASHEW MAYONNAISE:
📝 Ingredients:・100g unsalted cashews・1 tbsp apple cider vinegar ・about 50ml water ・kala namak salt
📝 Instructions: ・Soak the cashews overnight in warm water・Drain and rinse the nuts and add them to a high speed blender ・Add the other ingredients and blend it all together - ready to serve!

I was intimidated to make my own dairy-free cheese because I thought it was going to grow into some crazy bacteria that would turn into a monster from Stranger Things, but luckily that didn't happen. I was even scared to taste it once it was ready. I was such a sissy for no reason because THIS CHEESE IS AMAZING!!!⠀
Okay maybe I'm a little bit excited but it's rewarding when you wait patiently for 2.5 days to create something and it turns out exactly how you intended — incredibly creamy and yummy.⠀
This cheese is gut lovin' because of the healthy probiotics in it have transformed the cashews into a fermented magical creamy cheese that is much easier to digest, enhanced the bioavailability of nutrients and reduced the phytic acid 🙌🏻 Thanks to @genuinehealth for making such solid products which give me recipe inspo 😃

I made a homemade cashew cheese, for the pizza, for a second time. Turned out great 👌🏽Would you be interested if I showed you how to make it in a story?? What with having to make the cheese from scratch, you don’t know how relieved I was when I remembered that there was some pre-made pizza dough in the freezer, leftover from my last homemade pizza. (Phew!!! There’s only so many plates I can juggle on a weeknight evening!) Just a quick defrost in the microwave and BOOM! The dough was ready to roll! AND while I was rummaging around in there, I found a little bag of pizza sauce which was also leftover from last time! 🙌🏼 (Thank you, past me, for being frugal and keeping the leftovers!)
I topped the pizza with @peppadewuk, mushrooms, balsamic onions, sweetcorn, spinach, olives, Cajun seasoning and @eat_oumph Yum! (the Oomph! was on my half of the pizza only ... hubby’s not keen on fake meat 🤷🏼♀️) ____

Plant-based nachos 😋🤙🏼 Organic blue corn chips, basmati rice, @bionaorganic black beans with added spices, cherry tomatoes from @barnesfarmersmarket, onions, avocado + coriander from @twopeasinapod.barnes and cashew crema recipe by @ohsheglows. Mexican bean and Pilaf rice Burritos with Hemp Tortillas, Creamy cashew cheese, avocado, fresh salsa, rocket and caper berries
This was whipped together in 45 minutes, excluding cooking the bean mixture. With the leftover nacho mix from yesterday, I thought I would get creative and turn it into burritos!
Burrito Filling – Pilaf Rice, Mexican Bean Mix (see recipe a couple of posts back), spicy tomato salsa
Hemp Tortillas- makes 4
¾ Cup whole meal plain flour + extra for sprinkling, ¼ Cup Hemp flour, 2 tbsp. oil, ¼ Cup water, pinch of salt. Place all ingredients into a bowl (excluding the extra flour) and stir together with a spoon, then finish with hands- it should only take a minute- to form a soft dough. (If mixture is too dry add a tiny bit of water). Break the dough up into 4 equal portions. Place a sprinkling of flour onto a clean surface and take one portion of dough, roll into a neat ball (put flour on your hands to avoid sticking) and squash into a disk shape. Take a rolling pin, and begin rolling the dough out, using sprinkles of flour to stop the rolling pin sticking to the dough. Flip the disk over multiple times through the process and re flour to avoid sticking. Roll until as thin as possible.
To create tortillas that are cooked yet still soft, the key is a SUPER hot pan and a quick cook time. Cook either side for about 30 seconds.
Fresh Salsa- Finely Diced cucumber, red onion, cherry tomatoes & coriander with salt, pep and a squeeze of lime juice.
