LEMON 🍋 CASHEW COOKIES

Recipe serves 12. Macros per serve:
1 cup cashew butter
1 lemon (use juice and rind)
1/4 tsp baking powder
1/2 tsp vanilla essence
Mix all ingredients in a bowl and place on lined baking tray.
Cook in oven on 180 degree fan force for 10 mins and viola! 👌🏼😋

Tonight’s dinner for my guys was creamy chipotle alfredo topped with some @fieldroast chipotle sausages. These cashew based cream sauces are so quick and easy to blend up....and my guy just LOVES them! Sauce recipe below (because I actually paid attention to the amounts of stuff I was throwing into the blender for once!)
1 c raw cashews
2 c water
1 tbsp lemon juice or acv
1 1/2 tbsp flour
1/2 tsp garlic powder
1/2 tsp chili powder
1/2 tsp ground cumin
1/4-1/2 c chipotle sauce (or 1-2 chipotles in adobo)
3/4 tsp salt
Blend everything in a high speed blender or nutri bullet until smooth. Pour into saucepan and heat over medium high heat while whisking until thickened. If too thick, thin with additional water. Pour over 1 lb cooked pasta. 😋
