Day 7 With the help of a bright morning sun, I get out of bed a little earlier than usual. Is it the southern air that has this effect? Probably, I feel more rested and more energetic. The Caribbean sun, this natural vitamin, has a certain effect on my body and my mood. I highly recommend it. Another beautiful day in paradise! There are recipes we make once or twice, and the recipes which we make again and again. Not counting baking and desserts, this is without a doubt the recipe I've made and eaten the most in my life: Jerk Chicken! Most of the ingredients are standard at this point, but I tweak it just a little every time to see what I can improve.
My essential components of jerk are: slow smoky cooking, scotch bonnet peppers (I like to use Trinidad Moruga Scorpions at times though), and allspice. Also, fresh thyme and scallions are essential for my preferred taste. An overnight marinade is so important, as well.
I have a lot of love for jerk, if you haven't guessed. 😂 I woke up hours early so that I could cook off these wings before work, and if you know me, then you know that nothing will make me wake up early... Other than these wonderful pieces of Caribbean sunshine.
