I am all for upcycling leftovers especially because Ramadhaan is not a time for elaborate feasting or wastage but rather a time to abstain from and train ourselves not to indulge in copious amounts of food ❤ So today's post is the ever popular roti quesadilla creation made using leftover pot roast chicken and potato! I added chutney for extra flavour and cheese to bind and that's our meal for iftaar! These quesadillas were fried on my @cadacsa 2-Cook Pro! Appliance: @cadacsa 2-Cook Pro
1 dspn red ginger garlic masala
½ dspn red coarse dry chillies
1 tsp crushed garlic
1 dessertspoon fine dhana
1 tsp fine jeero
1 dspn fine mustard
1 tsp arad
2 tsp fine salt
2 dspns yoghurt
2 dspns saffron water – a few strands saffron boiled in water
Juice of 1 lemon, mix with a little white vinegar
1 dspn oil or ghee
A few elachi, cinnamon sticks, cloves, and peppercorns
Mix all the ingredients together and make a paste. Slit chicken. Apply paste all over the chicken and marinate overnight. Heat ghee or oil in a pot. Add spices. Add chicken and cook on medium heat. Cook chicken until meat is tender. Add potatoea close to the end. Increase temperature and allow to brown
Take one roti, smear with samoosa chutney, top with leftover chicken and potato and dot with more chutney. Sprinkle with grated cheese. Top with another roti and fry in a non stick pan or @cadacsa 2-Cook on low till crispy ❤

Today we made a delicious discovery in Cape Town that is unrelated to wine, but the next best thing...food. We wandered into Jéan-Lucs Kitchen on Orphan Street just off Bree Street and discovered a new restaurant. Jéan-Lucs has only been open for one week. We met chef Jéan-Luc, yes his parents are Trekkies, and enjoyed the Tasting Board for lunch. Chalmar sirloin w/ brioche, tomato risotto, roasted onion salad w/ ponzu, fried calamari, cauliflower soup and slow-roasted pork belly over roasted potatoes made the perfect lunch for two!
