This recipe is simple to the core, and you get 8 jumbo muffins in no time. I used the @spriggourmet bourbon vanilla extract for this recipe. The thick vanilla is a heavenly experience.

✨Sift 1 3/4 cups All purpose flour, 2 tsp baking powder, 1/4 tsp baking soda, 1/4 tsp ground cinnamon and pinch of salt. Fold in 1 cup chopped chocolate chunks.
✨In another bowl, beat 1/3 cup softened butter with 2/3 cup granulated sugar. Add 1 large egg. Beat well. Add 1 cup butter milk and 1 tbsp vanilla essence. ✨ Fold dry ingredients in wet. Don't over mix. Scoop batter in muffin cups and fill them almost upto the top. Add some chocolate buttons on top. ✨Bake in preheated oven at 220C/425F for first 10 minutes. And then reduce temperature to 180/350 for the remaining 20 minutes. .

Lunch today I chopped chicken tomatoes avocados pawpaw sprinkled with pistachio nuts and barberries dressed with pomegranate molasses and a bit of EVO was very nice. You can make salad with whatever you have in the refrigerator using healthy ingredients and fats. my salad I'll will call it pawpaw chicken avocado salad with pomegranate dressing sprinkled with pistachio nuts and barberries served in lettuce cups.
