ATTENTION... your salad just got an upgrade!
Here’s the ingredients you’ll need to try these Crispy Chicken Lettuce Cups:
3 chicken breasts, diced
1 cup seasoned flour
1 1/2 cups panko breadcrumbs
3 eggs, whisked
1 cup hot sauce
1/2 cup butter
1 tbsp honey
1/2 tsp pepper
1/2 tsp salt
1/2 cup sour cream
1/2 cup mayonnaise
1 tbsp lemon juice
1/2 tsp pepper
1/2 cup crumbled blue cheese (instead of blue cheese you can use mozzarella cheese)
2 tbsp chopped chives
Buffalo chicken on top of a blend of cucumber, celery, carrot, and tomato topped with homemade Greek yogurt ranch and scallions. For the chicken I marinated chicken breast in @franksredhot then breaded them in @iansfoods gluten free panko bread crumbs and baked for 20 minutes! Meanwhile, I mixed one cup of @chobani nom fat plain Greek yogurt with half a pack @hidden.valley ranch dip mix to make an easy healthier ranch!

Buffalo chicken is perfect for meal prep! I cooked chicken breasts in my Instant Pot, then shredded it and added buffalo sauce (store bought). Two meals will be buffalo chicken wraps and two will be salads. Both include shredded romaine, carrots, celery, red onion and Opa bleu cheese dressing. Nom nom nom
Lunch prep for this week is shredded buffalo chicken and blue cheese with cauli-rice and Brussels. The chicken was cooked in the crock pot while I was at the grocery and was done in only a few hours. By the time the groceries were put away and Brussels were in the oven, it was perfect for shredding. This prep took no time at all! #mealprep#lunchprep#buffalochicken#lowcarb#easy

Keto Chicken Buffalo Meatballs 😍
1lb ground chicken
1 egg, beaten
2 sprigs of green onion, finely chopped
1 tablespoon almond or coconut flour
1 tablespoon mayonnaise
1 tsp onion powder
1 tsp garlic powder
1 tsp pink sea salt
1 tsp ground black pepper
1 cup of buffalo wing sauce
Preheat the oven to 400. Spray a sheet pan with non stick cooking spray or grease with Olive oil, coconut oil or butter. (I use Olive oil)
In a large bowl, combine all ingredients, minus the buffalo sauce. Mix well.
Use your hands to form 2″ balls, mixture will be sticky. If desired set out a small amount of almond or coconut flour to dust your palms with. I personally just pushed through it and made a mess all over my hands. Another option is to refrigerate for about 15 mins. before rolling.
Place meatballs on a sheet pan. Bake for 15 minutes or until center has reached 160º.
Remove meatballs from the oven. Place in a skillet or pot over medium low heat. Coat with buffalo sauce. Continue to cook just until sauce is warmed.
Finished off the evening with a buffalo chicken sandwich, since they were again out of my first choice, the Chimay burger. Never did get a spoon for my soup bowl of ranch there. #buffalochicken#settling#worldofbeer
