English Trifle

For the custard
6 Egg Yolks room temperature 
6 tsp Corn Flour 
3 cup Milk 
3 tbsp Sugar 
1-1/2 tsp Vanilla Extract .
.
For the trifle
180g pound cake
1/2 cup whisky
4 cups raspberries
1/4 cup sugar
Juice of 1/2 a lemon
Fresh raspberries and mint leaves for decoration

Instructions
To make the custard: Whisk together the egg yolks, cornflour and sugar until well combined in a small bowl. 
In a saucepan gently heat the milk and vanilla until warm (not hot), remove from the heat and add the milk to the egg mixture a little at at a time.
Pour it back into the saucepan and whisk constantly until boiling continue whisking until the custard is thick enough to coat the back of a spoon (if mixture isn't thickening, gently heat again). Remove from the heat and strain through a fine mesh strainer into a bowl. Press a piece of plastic against the surface to prevent a skin from forming. Let cool slightly.
To make the raspberry jam: combine the raspberry, lemon and 1/4 cup sugar in a saucepan and bring to the boil till thickened. Allow to cool.
In a medium bowl, whip the remaining 2 cups cream with the sugar.
To assemble the trifle cut the cake into 1/2 inch thick slices to fit tightly into the bottom of a trifle bowl, and slightly up the sides about 1-inch.
Drizzle the cake with whisky then top with 1/3 of the custard, followed by 1/3 of the raspberries jam. Repeat the process, layering the remaining ingredients, finishing with the freshly whipped cream on top. Decorate with the fresh raspberries and mint leaves
