Carrot, ginger and blood orange smoothie. This is a late entry to Kimberly's @thelittleplantation #EatCaptureShare challenge for the theme "Gulp" . I had shot this last week, but I was somehow not happy with the way the pictures turned out. So I lost all motivation to spend time editing and drafting a post. I meant to do something about it yesterday, but life took over and I did not even get on to Instagram! .

PEACH PIE SMOOTHIE from @eatingbyelaine - very filling and satisfying, naturally and mildly sweetened, thick, peach flavor is subtle...tasted more nutty than peachy, but still delicious!
4 medjool dates, pitted (47g)
1 tablespoon chia seeds (11g)
2 tablespoons hemp seeds (18g)
3 tablespoons slivered or sliced almonds (21g)
1/4 cup rolled oats (23g)
1 cup frozen peaches (140g)
1 cup unsweetened almond/cashew milk or milk of choice (226g)
1/4 teaspoon vanilla extract
2 cups ice (226g)
Place dates, chia seeds, hemp seeds, almonds, oats, peaches, milk and vanilla into the container of a high-speed blender, i.e., Vitamix. Blend until smooth. Add the ice and blend until thick and smooth. Yield 1 large serving or 2 small servings.
NOTE: Peach flavor was subtle...tasted more nutty than fruity. Next time, I will try adding carton unsweetened coconut beverage in place of almond/cashew milk, use raw cashews in place of almonds and add pure peach extract in place of vanilla extract and hope it will become more peachy tasting.

You need someone to share this drink with. Even with soy milk it's so heavy and decadent. 😅
Blended chunky peanut butter, chocolate sauce, soy milk and ice. Most recipes call for the coffee to be added in the blender, but I prefer to pour it over for maximum taste. Also added choco chips and crushed cashiew in there. Best for breakfast! It's so filling! 👍
A sweet and fruity way to start Sunday! Teamed up my @thenutribullet with some red & green grapes, blueberries, raspberries and some coconut & vanilla yoghurt for a quick, easy vitamin packed brekkie. I can't usually stomach eating food in the morning until around 9:30am but this is a fab way of getting going! 🌞
And the verdict...bang on!
I think the amount of ginger you add will be according to taste but it offered a nice wake up call for me this morning. If you are into calorie counting, I plugged all the ingredients into #myfitnesspal and it came out at 106 calories per serving. It wasn’t thick, just nice!
Ginger is great to add to smoothies if you want to disguise the taste of an ingredient, not in the case, but it will allow me to add kale which I’m personally not a fan of.
Just to confirm I had more than this for breakfast, a bagel with @meridianfoods Cocoa & hazelnut butter which was tasty.
