This morning was slightly hectic as both kids have started school & so breakfast was eaten on the go 🚙 I have to give major props to @saladandgo as they sell fresh, healthy food through a DRIVE-THRU😱 and everything is like under $6 .... like WHATTT literally my dream come true!! We need a location down on campus @uarizona 💙❤️ I got a breakfast bowl with egg whites, nitrate free bacon 🥓 , potatoes, avocado 🥑 and salsa 💃 I added spinach when I got home and it was over the top tasty 😋 I just want healthy food without having to go broke or get out of my pj’s🙌🏼 who else would love something like this near them? ———————————————————————— #healthyforless#drivethru#avocadoaddict#breakfastofchamps#baconlove
Sometimes breakfast is what’s for dinner 🍳 🤷🏼♀️ Normally I would cringe at a “rest day” in the middle of the week. 😖
I use this day to do a mid week cleaning, so that I can spend the weekend with my hubby ❤️ I’m able to game plan for my challenge group that starts next Monday (still a few spots left 😘😉) I’m able to let my body recover and crush the next days workout 💪🏻 I’m absolutely loving this workout program and how it’s helped mentally and physically!

PB Chia Pudding by @vegamelon ✨
-1 cup plant milk
-4 tbsp. chia pudding
-1 tsp. sweetener of choice
-1-2 tbsp. peanut butter
Combine well in a jar and let set for at least 3 hrs, mixing again after the first hour.
COCONUT GRANOLA (2 servings):
-2 cups rolled oats
-1/2 cup sunflower seeds (any nuts will do)
-1/2 cup coconut shreds
-1/4 cup applesauce
-1/4 cup sweetener of choice
-1 tsp. cinnamon
Combine all ingredients in a large bowl and bake on a cookie sheet at 350° for ~20 minutes, flipping halfway. Let cool on the tray and enjoy!

Are you a fan of the ever so popular Açaí Bowl? My favorite is from the best coffee shop in town, @coffeegallery.hawaii! Local açaí sorbet, house made granola, fresh local bananas, and drizzled with honey. They have other toppings as well, but I love how simple and tasty this is. It’s a great way to start the day for sure! What do you like on your açaí bowl?

Yogurt bowls are one of my favs 😍.⠀
They’re so easy to throw together and you can put as many ingredients as you want. ⠀
Not to mention, they’re super filling and will keep your blood sugar balanced (if you do ‘em right).⠀
In today’s yog bowl, I have plain goat milk yogurt (from @traderjoes), ground flax seeds (I grind up a bunch at the beginning of each week and keep them in the fridge), chia seeds, fresh organic blackberries, and my pumpkin seed/peanut butter granola 🤗🤗🤗.⠀
Once I snapped my pic, I mixed it all together to let the chia seeds expand a bit, for optimal benefits 😉⠀

omg @the_shelf_life and I made waffles together (because she’s moving away to cOLLEGE 😭😭😭) and they were so good!! we sort of had to figure out how to use the waffle maker bc they were a little bit annOYING to cook (they took a while) but we figured out and then this beautiful thing came out of it. topped these waffles with almond butter, fruit, and hemp seeds.
also haha story time, today I was working out and I dropped my headphone so when I dropped to pick it up I rammed my head into a squat bar coming up so hard that I started to bleed!!! I had to stop my workout but things like this happen, and it’s much more important to make sure you don’t injure yourself further than push yourself to “finish a workout”.

(Recipe 👇) Felt like trying something new so I made myself some moringa smoothie.. honestly, green smoothies are just fruit smoothies with some sort of green vegetable 😋 and today that green vegetable was moringa powder.. never tried it but it was not bad.☺️ my theory is that if I have enough banana, then the smoothie is just like a nana milkshake 🙌 topped this smoothie with some more fats because I didn’t have enough in my smoothie 😅 coconut flake, chia and @go_raw sprouted pumpkin seeds 😋
In my cup: 1 frozen banana, 1/2 med zucchini, 1 c coconut water, 1-2 tbsp moringa powder, cinnamon
Toppings: chia, goji, coconut, and pumpkin seeds
The more I look at this, the more I see that my breakfast made a smiley 😃 face this morning! I took it as my reminder to smile as much as I can today 😊. So far the day is off to a great start with this plate and I am looking forward to my last day home before taking off for our first road trip tomorrow!
dEATS: Egg white omelette with onions, tomatoes, peppers, and mushrooms. Side bowl of a fresh peach 🍑 and some grapes and a small square of an energy bar made by one of my teammates (it has oats, pb, honey, and cocoa powder 😋)

I love the different stuff in life! Like SCRAPPLE! Have you ever heard of scrapple? It’s awesome. And impossible to come by in the Midwest so when my family comes from Pennsylvania, they always bring me a couple bricks.
I could seriously eat the whole thing in one sitting. But that would be a bad idea (#portioncontrol ).
