Bhuna Murg (roasted chicken in thick onion gravy)
This is my favourite Indian chicken recipe which is easily made and requires minimum ingredients.Since the cooking is done with just 1 teaspoon oil..it takes a while to sautè all the stuff but the results of the slow cooking are totally lip smacking!!
Rough calorific value : 370kcal for 250g of cooked chicken
Proteins 55% fats 18% carbs 26%
1/2kg chicken pieces cleaned
1/2kg raw red onions chopped fine
1 teaspoon olive oil
1/2 cinnamon stick
4-5 black peppercorns
2-3 dried red chillies
1 teaspoon jeera seeds(cumin)
2-3 big ilachi(black cardamom)
2 teaspoon chicken masala(i use mdh)
1 teaspoon haldi powder(turmeric)
2 teaspoon dhania powder(coriander)
1/2 teaspoon red chilli powder
1 tablespoon ginger garlic paste
Salt according to taste
Water 3 cups
Wash and clean chicken pieces and keep aside.
In a wok take olive oil.Sautè jeera,cinnamon,nutmeg,dried red chillies,cloves,black peppercorns,big iliachi and ginger garlic paste.Add onions and keep sautéing them till golden brown.add the turmeric,dhania powder,red chilli powder,chicken masala and salt and mix well.add the chicken pieces and make sure the masala mixture coats them well.Add 3 cups of water and bring to a boil.then put the flame on simmer and cook for next 30-40 min while stirring in between.Check to make sure chicken is cooked through(it will break off easily from the bone).You can leave the gravy or u can dry it up as per your liking.Garnish with green chillies and coriander!!

A wonderful meal of Bhuna Gosht: an Indian-style lamb dish with fat-free meat, first cooked in water then roasted in a frying pan with potatoes, fried onions and lots of aromatic spices.
Alongside, we'll serve a perfect and surprising dish of Dal bhat- a delicious Indian orange lentil stew, this time with an addition of squash and coconut cream.
1 kg mutton
6 Big Onions
4 choti ilaichi
6 badi lal mirch (for colour)
12 choti lal mich
2 inch ginger and 12 kali garlic
1 cup roasted whole dhanya and zeera..
1sp haldi and salt as per taste
Method :- 1)Heat oil add whole garam masala and onions to it let it get lighlty golden brown
2) Add gounded masala paste to it and cook untill oil separates
3) add mutton and stir it well
Add 2 cups water and pressure cook it..
4) gravy consistency should be think after cooking so add watet accordingly... 5)once mutton is cooked add cilantro leaves and garnish it with ring onions and lemon

Enjoyed a fab iftar last night with my fab sister in laws @lableyullah and @khaliknazma
We had pakoras, somosas, lamb jalfrezi, king prawn bhuna, and tarka daal...served with garlic naan bread and chapattis, perfect to mop up those sauces 😋! The bartenders, @ ak/tomcruise and @kamalullah made a smashing strawberry, lime and coconut mocktail 🍹whilst we enjoyed witty, nonsense commentary from @ ar 🤣! @khaliknazma baked a delicious, classic Victoria sponge 🍰. And of course, the children made a lot of noise and a lot of mess ⚽🥅🕹️ !
But hey... It's sooo worth it, to hear that sound of chatter and laughter throughout our home!

This stuff won my heart man. I had never imagined Iftaar at Mira Road would be such a delicious affair. I can't even describe how tasty this Bhuna Gosht was. The masala was bursting with flavour but not heavy on spices. The meat was so tender and melt in the mouth.
@kajori_t introduced us to this wonderful place called Nihal Corner and I cant thank her enough for this. The waiters were so warm and welcoming. The ambience was festive and people all around me were eating the most amazing dishes. If I can find my way back here I hope to go this place soon just for the Bhuna Gosht.
