Cheeeeeesecake time 🙌🏼
Tried a new recipe because I got inspired by @biancazapatka and her cheesecake versions
This is my interpretation:
I proudly present my Summer-cheesecake aka RED BERRY DREAM❤️
30g vegan butter
2 tsp maple syrup
Pinch of salt
1 tbsp water
Blend oats until you have flour. Add remaining ingredients and combine well. Spread the dough in a 7inch baking pan and put into the fridge.
400g coconut yoghurt (I let it drain for 15-20h to have a better consistency)
Pinch of ground tonka bean
3 tbsp maple syrup
Combine until smooth.
Pour on crust and put into the preheated oven (170*C) for about 40 minutes.
Let it cool down completely.
50g red currents
Cut strawberry into slices. Take the 15 best slices and put the rest into the food processor with the red currants (save a few for the decoration)
Blend until smooth.
Once the cake is cool spread berry sauce on top and add strawberry slices and red currants.
Homemade strawberry shortcake for a special bday dessert 🎉🎉
• 1 1/3 cups whole wheat flour
• 1teaspoon baking powder
•1/2 cup honey
•1/3 cup oil coconut oil
•teaspoon vanilla extract
•1/2 cup almond milk
•4-5 cups of fresh strawberries, mash and store in fridge •few dollops of whipped Greek yogurt
Bake for ~20 mins
The first day we came to look at our house, we drove through the gate and my hubby spotted a beautiful, ripe blackberry on a bush off the driveway. He plucked the berry from the bush & popped it into his mouth, his eyes got really wide and he said it was the best blackberry he had ever tasted. We continued up the driveway and saw that the entire thing was lined with blackberry bushes. When we finally got to the top of the driveway we realized the entire fence on the other side of the property was also lined with blackberries...the back of the property...the front of the property...all covered in blackberries. 3 acres, lined almost completely with blackberries. Every year since we’ve been here, we carefully watch the cycle of these amazing plants. In the Fall, they cut loose and shake off their leaves. In the Winter, they slumber. In the Spring, they burst forth with new life, clusters of flowers adorning them & busy bees nuzzling the flowers. Now it’s Summer, and that means...they’re coming💜🖤
