We are increasing the number of bee hives here at the farm. In this video Tony has positioned the nucleus hive in our bee yard & is opening up the entrance to let the bees out to explore their new surroundings.
The bees are an integral part of our holistic approach to managing the farm. They do amazing work plus we get the most beautiful raw honey. It is wonderful to see so many people understanding the vital role bees play in our ecosystems - rural & urban.

Working with some amazing red mullet at the moment. We aged the last catch for 8 days. Things got pretty ammonia especially around the belly of the fish. Cut the head of this one and coated the exposed flesh with beeswax, the idea is that we can get a better-aged piece of fish without ruining the belly. Let's see what happens this week. -
