I found myself on a last minute road trip (4 hours round trip) yesterday and it was the first time I had to find something to eat at a rest stop on the thruway since my surgery. At first I thought about grabbing a burger or even mashed potatoes from Roy Rogers but then decided it really wasn’t the healthiest option and I’d be better off waiting until I got home if I couldn’t find something else. Then I spied these things from my childhood and knew I had found my solution. I only ate the meat and cheese (fake cheese - which was rough because I’m pretty picky with my cheddar) and I left the crackers for my sister to eat. It was the perfect sized meal while on the road and not entirely unhealthy. Only 6 more days and I’ll be able to start eating normal food again! I’ll be excited to start trying some new recipes I’ve been eying for the last 6 weeks!!
