Sometimes you just have to throw in the towel. I’ve given this paleo pancake mix chance after chance and I’ve never had success. They were never good. I tried to mix some pumpkin in just to experiment and it was a mess. They were all raw inside. Even the last one, thinner than a tortilla was still raw. I intentionally left it on the stove and came back, still raw. Breakfast today were two chicken meatballs and some 2 day old oatmeal. #paleopancakefail
This is what my average work day looks like. I look like a pack mule coming into the office...carrying one bag that is entirely food & drink! ⚖️Almost 3 years later, and I still weigh/measure everything out... small containers are 1/4 cup of various things: nuts, granola, trail mix
🍴 I typically eat 5-6 times a day...3 of those being at work. 🐤 Meal 1 is usually some kind of chicken - shredded or crack...
🥄 Meal 2 is almost always Greek yogurt, granola & nuts
🍲 Meal 3 is 1/2 cup turkey chili with 4 ritz crackers and cheese. Sometimes some brown rice & quinoa...but almost ALWAYS chili. And usually trail mix.
🥤I pack 2 servings of cherry spark...as that’s all that keeps me away from the free fountain Diet Coke & diet dew now available daily at my office. I also bring a watered down strawberry lemonade bai. 😬 Yes - I literally eat almost the same things every day. It makes all of this easier!

15g protein and only 2g sugar 💪🏼 Our Gingerbread Protein Cookie Mix prepared with almond butter and cut into cute winter mittens. ❄️ Preparing our cookie mixes with nut butter boosts the protein and makes a heartier cookie (also adds a couple grams natural sugar, our mix alone has <1g from the whey protein). Preparing with dairy butter makes a more traditional (soft) cookie texture. Either way, you're indulging without the guilt, and without any artificial ingredients. 🎄 I made these this morning for breakfast, but now I want to go home and add some icing to the rest of the batch! Our Sugar-Free Frosting Mix in vanilla or white chocolate would be perfect. 😍
I tried cocoa powder in my pour over (unsweetened). I guess I should’ve googled it because it was SO SLOW. The fine powder clogged the strainer. BUT the end result was great but too cold! - it took too long 🤨 #coffeechronicles (I’ve done this in a regular drip coffee maker, it works great)
What do I want to eat right now? Chocolate cake & French fries (literally a meal in my previous life)... 🍫🍟 What am I going to eat? 1/2 cup Greek yogurt (11g protein) + 1/4 cup granola. This is the best tasting plain yogurt I’ve found, and it’s also cheapish & low in sugar! This granola is much higher in sugar than I normally do...but it’s a limited edition, and I love gingerbread, so... 🤷🏻♀️
I still have cravings. I still eat things that are zero nutritional benefit. But I try to limit my access to them, which limits how frequently I cave 😊 It’s logistics!

It started off as a punishment run. Last night I ate an entire Marie Callender pot pie, and I had every intention of getting up this morning and “running it off”. (600 cal, good luck) but when I started walking, the feelings of hate disappeared. I ran some and walked some and without realizing it, an hour had passed and I had gone a tad over 3 miles. I was able to tend to myself this morning and instead of feeling bad, I feel refreshed. I feel grateful for a new start today.
Dec 10: “Today’s Eats” This is a typical day for me. I start off with the best intentions, then fail by afternoon and almost every night. I do a little better when I do intermittent fasting. I mix one whole packet with a tbsp and 1/4 of unsweetened vanilla almond milk and it is INCREDIBLY DELICIOUS 🤤🙌. For the cake mix, I use a half can of diet cream soda! Saves hellas in macros!
