Chocolate Chip Banana Muffins.
1 chiaegg (1 tbsp ground chia seeds + 3 tbsp water, whisk then let sit for 5-7 min)
2 ripe bananas
1 ripe avocado
2 tbsp coconut oil, liquid
1 tsp vanilla extract
4 sticky medjool dates (pits removed)
1 C rice flour + 1/2 C buckwheat flour
1 tsp baking powder & baking soda
1 tsp ground cinnamon
1/4 c coconut sugar
1/2 tsp sea salt
Vegan chocolate chips
1. Preheat oven to 350F and line a muffin tray with silicon molds/parchment paper cups. Set aside.
2. Blend all wet ingredients in a blender until smooth.
3. Stir together all dry ingredients in a bowl. Add the wet to the dry.
4. Mix in the chocolate chips & scoop the mixture into the muffin tins. Top with more chocolate chips and chopped walnuts (or whatever toppings you want🤗).
5. Bake for 35-40 minutes or until it passes the toothpick test.

Each cookie is made up of two crunchy and lightly cocoa flavoured cookies with a mild-tasting cream cheese filling inside. The cookies are tinted red, just as expected of the classic cake. The creme filling is a sweet vanilla frosting a with a tangy cream cheese vibe. The cream in these cookies is much sweeter than in other flavours. The cookie to cream ratio is spot on, we got a taste of both and felt none was competing with or diluting the other. ➖
