A hot skillet of baked eggs, beetroot, celeriac, dill and pickled ewe’s cheese -one of my favourite dishes of the evening. Watercress, rye, Harborne Blue and radish plus some beautiful sourdough and locally made butter with flakes of sea salt out of sight.
My breakfast this morning was this delicious shakshuka! I have wanted to make this dish for a while now and this morning i actually had the time, it was sooooo tasty 🤤 and so easy! Sauté some onion, mushrooms & garlic in a skillet add some crushed tomatoes and spices of your choice, let it all marinate together and cook for a few minutes. Then add some eggs, pop it in the oven for like 15 minutes and DONE! -
Breakfast is my favourite meal of the day, what are some of your favourite things to have for breakfast?!
Four different breakfast flat wraps (baked)
Prep time: 10-20minutes (depending on your toppings)
Bake: 15-20 minutes
If you’re someone that likes a big breakfast to help ease the hunger throughout the day then these meals are guaranteed to do so.
1 wrap ( whole grain or normal)
Sprinkle olive oil so the wrap doesn’t stick to the pan or foil.
Chicken sausages / Turkey sausages
Green olives (soaked in white wine)
Fresh spinach (chopped) mixed with
Tuna mixed with scotch bonnet
Butternut squash ( you can add anything you want doesn’t have to be the exact same )
Chilli pepper, all purpose, parsley, vegetable bullion powder, black pepper
It’s important if adding chicken or meat to cook it first before the eggs. Once you’re satisfied then you can add everything else

Veggie meal idea: Mexican inspired bowl 😍
For the sweet potato: Chop into 1cm rounds, spray with cooking spray and rub in smoked paprika. Bake 10min each side.
For the mixed veg: Gently fry peppers, red onion, tomatoes & kidney beans for 5 min. Put into an oven proof dish, sprinkle over Mexican spice mix and crack an egg over the top. Bake for 10min.
For the avocado: Chop 1 avo, drizzle with lemon juice and sprinkle salt and coriander over.
For a vegan option, leave out the egg 😊
