Aside from experiencing Arzak’s cuisine, our favourite moments were ones spent talking with Chef Elena and her team, learning more about the history of Arzak, touring around the house and paying a visit to Igor in the R&D lab! During our stop in the wine cellar we learned it can hold an impressive 100 000 bottles that are all highly temperature and light controlled. The pillar in the center of the cellar is the restored original which is over 100 years old and the focal point of the room- a nod to the house’s history which is surrounded by wines from around the world. Our next stop took us to the R&D lab where we met with Igor and finally witnessed the majesty of the spice wall. The wall contains almost 1500 references with new ones arriving frequently. They are ordered and QR coded so information about the spices can be accessed quickly and easily. It is clear the spice library is ground zero for the development of new dishes, a playground for ideas and a place for trial and error. We were also introduced to the brand new 3-D printer the team is currently experimenting with, printing plates and utensils that could very well end up in the dining room one day! We enjoyed our visit so much and have such a deep appreciation for what Chefs Elena, Juan Mari and the entire Arzak team have achieved and what they intend to do. Their journey has been nothing short of remarkable (coming up to 30 years of 3 Michelin stars) and we certainly did not see any signs of slowing down! История ресторана берет своё начало в 1897 году, когда дедушка великого  шеф-повара Хуана Мари Арзака ( Juan Mari Arzak)  построил дом, в котором и по сей день находится ресторан .

В 1966 Хуан Мари Арзак принимает управление рестораном вместе со своей матерью, которая была его учителем по классу национальной гастрономии Страны Басков .

И в 1972 году ресторан получает свою первую звезду Мишлен🌟 .

1978 год - вторая звезда🌟🌟 !

1989 год - третья звезда Мишлен🌟🌟🌟!!! Три звезды, которые ресторан имеет до сих пор и которые они воистину заслужили ! 👏👏👏 !

Сегодня шеф творит свои шедевры вместе с дочерью Еленой. Гены кулинарного таланта передаются в этой семье по наследству, чему мы искренне рады .

Не смотря на звездность, атмосфера ресторана очень дружелюбная. Гостей встречают, как родных. Вам подробно рассказывают о каждом блюде, придавая дополнитальную изюминку ужину. Нас удостоил чести сам шеф, присев с нами за стол. А также нам устроили экскурсию на кухню и в винный погреб .

Сомелье ресторана - мужчина серьёзного вида, в кожаном фартуке - мастер своего дела от Бога🍾🍷 .

Я не буду описывать блюда, потому что я не смогу закончить этот пост никогда. Всё волшебно и безумно вкусно !

Pigeon breast from neighbouring France and parsnip over oranges, vanilla and kimchi. Chef Elena described incorporating different cultures in Arzak’s cuisine in their own way, using ingredients she and the team are inspired by during their travels and research. There were 5 symbols found in the dish that were made of blue potato, shaped to represent strength, territory, thought, introspection and return to the beginning. Beneath each of the symbols were flavours of apple and beetroot as sweet and tart gels. Pigeon breast from neighbouring France and parsnip over oranges, vanilla and kimchi. Chef Elena described incorporating different cultures in Arzak’s cuisine in their own way, using ingredients she and the team are inspired by during their travels and research. There were 5 symbols found in the dish that were made of blue potato, shaped to represent strength, territory, thought, introspection and return to the beginning. Beneath each of the symbols were flavours of apple and beetroot as sweet and tart gels. The lamb was wonderfully prepared which was mild and not at all gamey, complemented by brightness and acidity of the black lemon. Though there were many components to the dish, they came together in such a way that, simply put, just worked. It was delicious, thoughtful, unique and whimsical; primarily local but with ingredient influences of other cultures, capturing the essence of what Arzak’s cuisine seemed to be all about

Txangurro- a traditional Basque dish of spider crab done the Arzak way with fried banana, lingonberry, mace and finished with a flambé of tequila and sherry wine. We were advised to eat the legs of the crab before the body to experience a progression from soft to stronger flavour. Though any way it was eaten was just so delicious with the buttery soft crab meat and rich sauce. There was also the Arzak poached egg (Chef Juan Mari always has one on the menu) that was cooked low and slow at exactly 65 degrees for 25 minutes, accompanied by wild mushrooms, tomato and crispy corn. The level of service was top notch here and it remained that way throughout the entire meal

The very first restaurant we visited in Basque Country was one we had been looking forward to for a long time. As soon as we landed in Bilbao, we took to the road and drove straight to San Sebastian for dinner at Arzak. The expansive wine shop and tavern turned restaurant built by the Arzak family dates back to 1897 and is now in its 4th generation with Chef Elena Arzak leading the charge. We had met Chef Elena a few weeks prior in Toronto where she spoke on Community and Food: From People to Plate to Palate at the Terroir Symposium. It was during her talk we had a look into the history and philosophies of Arzak which we were able to experience and appreciate first-hand during our visit. The very first restaurant we visited in Basque Country was one we had been looking forward to for a long time. As soon as we landed in Bilbao, we took to the road and drove straight to San Sebastian for dinner at Arzak. The expansive wine shop and tavern turned restaurant built by the Arzak family dates back to 1897 and is now in its 4th generation with Chef Elena Arzak leading the charge. We had met Chef Elena a few weeks prior in Toronto where she spoke on Community and Food: From People to Plate to Palate at the Terroir Symposium. It was during her talk we had a look into the history and philosophies of Arzak which we were able to experience and appreciate first-hand during our visit.
