They say don't meet your heroes, but I think that's a crock of bullshit. Meet your heroes, wax lyrical about their work, and emotionally destroy them for their packaging decisions. Then, and only then, suggest something that you know would be phenomenal in their hands. @olivers_cider is my favourite producer of drinks, and in cider and perry terms his work stands alone with its constant innovation, bold flavours and insanely well balanced end products. Tom takes from the land and lets it speak, and with time and fermentation it's said some pretty stellar things! The At the Hop series of ciders bring the fields of Hereford together, and after trying tom's perrys with all their nuance, we spoke about a perry in the series. Simcoe shares similar notes as to English perry pears, and this is just a dream combo. Pear drops, pineapples, apple, mango, everything great is in the glass. Would be easy to put this into overdrive, but that light acidity, the dry touch and light oil from the hops with a kiss of tannins make this a tightrope walk of balance. Oh wow.

Acid house on Monday, got the guys from @anxocider open today. First off is cidre blanc, bone dry and big carb. I threw this into the glass and got cava for days! Next up is the collab with @snowdriftciderco , much more tame than the blanc, and still beautifully dry. The acidity lifted this one nicely, and it was pure apple in a good way, perfect summer can. Finally the rosé, just like a pink lady in a cold can, and crushable in its purest form! Slightly wild notes on the nose reminded me it was cider, and that colour was just awesome! If there are any UK brewers looking for lees, I have a feeling that the cidre blanc would be bringing absolute next level to your saisons 👌 Somebody give these guys tannins and it'd be blinding!
