The weather is heating up again but you can stay cool with a Cauldorf Salad! Who doesn’t want fruit in the summer but it can add a lot of sugar which isn’t always good if you are watching carbs. This refreshing classic gets healthier by trading some of the apple with a head of diced raw cauliflower. Same crunch but way less carbs and the sweetness from the apples still shines through. Add some hard boiled eggs for protein and a little bacon because, well...bacon! 🤷🏻♀️Plop some on an avocado half for a quick lunch full of healthy fat. You could also add some leftover chicken for a protein boost! Make this one a summer staple!!! .
🥝This pretty emerald juice is a great way to use up greens you may have sitting in the fridge. ✨INGREDIENTS
1 to 2 large, juicy lemons, peel and pith removed1 medium Granny Smith apple, peeled and cored2 romaine lettuce leaves1/2 large cucumber, washed1 cup loosely-packed hearty greens, such as spinach or kale! You can add Chia Seeds if you like! ✨Juice, in this order, the lemons, apples, lettuce, cucumber and greens, following your juicer's specific settings for each. Stir in the chia seeds if using and let soak for 5 minutes. Serve the juice immediately over ice, if desired. 💕ENJOY!

This is my apple cinnamon crumble. 🥧🍏🍓🍒🍑🍐 Tips:
-Reduce sugar content by half acording to most recipes , no problem.
-Use more cinnamon with apples/pears, ads sweetness. (Cardamom is also very tasty)
- use very ripe fruits and berries, they are naturally sweeter (this is a great way to use bruised fruits and berries that are stil perfectly good to eat)
- substitute some of the flour with oats, crunchy, yummy and filling.

This is what I ate today. Might seem like a little because it is, as it is only one part of it. Okay, so #breakfast was a serving of vegan cereal with Almond milk and a gigantic apple. Lunch was two servings of dry roasted almonds (not all were pictured, but had about 50 of them), and a gigantic apple again. Dinner was a massive tomato salad that is kind of like pico de gallo-when I say massive, I really mean it, as 10 tomatoes were devoured in the process, lol- with an entire jicama, which was pretty big, and 3 spoonfuls of #peanutbutter . Yes I eat a lot of #fats and #carbs , but that is simply what my body craves. When I think about the way that we spend our time on planet earth, it seems less important about the specifics; the day-to-day routine, the jobs, the “titles”, the city we live in, the amount of money we have. And much more about the energy exchange that we provide while we are here; the support, friendship, connections, intimacy, love, and sincerity. Do you find it difficult to let go of your ego? To let go of who wins in an argument, or who has a nicer car? To release the drive to do things just so you can post about it, get a certain amount of likes, and only then give yourself permission to rest and feel at ease?
We have to work collectively to let this pressure go. We have to give ourselves & each other permission to live more authentically through empathy and understanding.
I find it’s easiest for us to go on auto-pilot with negativity, laziness, self-absorption, and rejection. We feel our own pain and suffering when we talk with others, which holds us back from giving each other lenience and love. But I want to challenge you: what if you spent a full day being open to love? Loving yourself, loving others, loving your life?
It all starts with us- change cannot occur on a mass scale if we can’t even change our single selves.. 💗
