Roasted Red Pepper and Whipped Goat Cheese Crostini with Super Kale Pesto Sauce
1 baguette, sliced into ½” pieces
8 ounce log goat cheese
2 tablespoons milk or heavy cream
2 tablespoons olive oil
12 ounce jar roasted red peppers, sliced
6.5 ounce jar Freak Flag Foods Organic Super Kale Pesto Sauce
Preheat oven to 400 degrees F.
Brush crostini slices with olive oil and place on baking sheet.
Bake in preheated oven for 10 minutes, until slightly golden and cool completely.
While the crostini is baking, make the whipped goat cheese by combining the goat cheese, milk, olive oil, and sea salt in a small bowl and mixing with a fork until it’s a spreadable consistency.
Spread each baked crostini slice with a tablespoon or two of the whipped goat cheese.
Top with a slice or two of roasted red pepper and then a generous dollop of Freak Flag Foods Organic Super Kale Pesto Sauce.
Serve and enjoy!

Are you supposed to bring an appetizer for your next get together this holiday season?
Try out this easy (and festive) caprese holiday wreath recipe! It is sure to be a crowd pleaser, and it doesn’t take up oven space.
12 oz grape tomatoes
10 oz cherry-size fresh mozzarella
2 tbsp olive oil
3-4 tsp dried Italian herbs
Handful of basil leaves (for garnish)
Flaked sea salt and ground pepper
1. Wash and dry the tomatoes. Arrange them in a circle on a large serving plate or round platter. Drain the mozzarella balls and arrange between the tomatoes.
2. Drizzle with olive oil and season with the Italian herbs, salt and pepper. Toss the tomatoes and bocconcini through the oil with a spoon.
3. Garnish with the fresh shredded basil.
4. To serve, place the bowl of balsamic glaze in the centre of the wreath. Arrange toothpicks around and underneath the tomato and cheese balls, with the sharp ends toward the middle of the plate.
5. Add balsamic glaze in the middle for dipping.
Need a knockout appetizer? I love goat cheese rolled in honey, dried cranberry, toasted walnuts, fresh parsley. It’s foolproof, takes 10 min, no baking, and can be made ahead. Plus, it’s a pretty presentation. 😍 All the flavors and textures work in perfect harmony here. I do 2 logs at a time. I serve one - and save the other to slice into grilled chicken salads for the following week. 💡It stays fresh in the frig for days. Method below: ⬇️⬇️ I use a handful of each ingredient - depends on how densely covered you want your cheese to be. ✅Toast walnuts in dry pan over medium heat until color begins to form, or roast in 425F oven for 10 min (watch carefully). ✅Cool and chop. (don’t bash with a rolling pin). ✅Chop dried cranberries and parsley. I use 2 plates: 1 for the honey and the other for the combined topping mixture. ✅Pour out 2-3 Tbs of honey onto the plate, carefully roll cheese in the honey. ✅ Lift gooey, sticky log over to the mixed toppings and roll, gently pressing into all sides. ✅ Place on serving platter with sturdy crackers, or refrigerate. Pull out 20 minutes before serving so cheese is a little bit softened (easier to spread). Sometimes I drizzle a little honey on top right before serving.
