So I literally haven’t cooked in about two weeks and have felt overall pretty bad. Turns out I have double pneumonia. 😳🤧😷🤒I haven’t had a fever for more than a day in over 20 years. Oy. It’s brutal when you’re old 👵🏻😉. (We started the week with my son having a fever and my daughter needing a staple in her head and me subsequently having to trade places with her on the exam table because I thought I was going to pass out from the news - normal, right? - so it’s been one for the record books. 😂✅)
So I decided to share one of my favorite easy to make appetizers from last year - a Christmas Tree cheese tray. 🎄
All I did was take the leaf cut out from my @wiltoncakes Halloween cookie cutter set. (I love dual purpose items!) .
I just used Havarti slices, sharp cheddar and Colby Jack, cut them with my leaf cutter then arranged them into the shape of the tree, starting with 6 slices on the bottom then moving to one at the top and topping with a star (also cut with a cookie cutter). I then “decorated” the tree with pomegranate seeds. I always get mine at @traderjoes because they are already seeded for you. (Have you ever tried to get pomegranate seeds yourself? No wonder that juice is so dang expensive! Haaa!) .
I think it turned out super cute, was soooo easy and was a huge hit at dinner! .

The eggplant dip that never fails parties ✌
Recipe: - 2 grilled eggplants
- 1 chopped onion
- 1 crushed clove of garlic or more for garlic lovers
- 1 tsp of yoghurt - 1/2 cup extra virgin olive oil
- parsley and pomegranate for garnish
Blend all and voila 🥂

1. Яйца - 4шт
2. Молоко - 100мл
3. Помидор - 1шт
4. Перец болгарский - половина 1
6. Можно ещё лучка зеленого
7. Немного соли, я использую йодированную
8. А и забыла)))) Куриное филе
Его я приготовила заранее, предварительно порезала на маленькие кубики, замариновала в соевом соусе и зелени на про часика и потом просто обжарила в ап сковороде.
Далее, взбила венчиком яйца, прорезала на кубики помидор и перец, а так же зелень, соль и все высыпаем в яйца. Хорошо перемешиваем. Подготавливаем форму, я использовала силиконовые формочки, купленные когда то в fixprace, смазала их маслом через салфетку, разлила весь омлет по формам и в духовку!
Выпекала омлет 15-20мин при средней температуре духовки. Home made hummus (made from scratch) .. .
Start with 250 gm dried chickpeas
1/4 cup fresh lemon juice (1 large lemon)
1/4 cup well-stirred tahini
1 small garlic clove, minced
2 tablespoons (30 ml) extra-virgin olive oil, plus more for serving
1/2 teaspoon ground cumin
Salt to taste
Dash ground paprika, for serving
1/4 tsp sodium bicarbonate
Wash the hummus grains and soak overnight
Drain the soaking water.
Place soaked grains in a cooking pot. Add water to cover the grains.
Add the sodium bicarbonate to the cooking water ( S.B. for skinning of the chickpeas)
After 10 min. of boiling start removing the skin of chickpeas using a straining ladel ... continue doing so till most of chickpeas get skinned
Drain the boiling water and leave cooked chickpeas to cool down completely
In the bowl of a food processor, combine the tahini and lemon juice and process for 1 minute, scrape the sides and bottom of the bowl then process for 30 seconds more.
Add the olive oil, minced garlic, cumin, and a 1/2 teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl then process another 30 seconds or until well blended. Add half of the chickpeas to the food processor and process for 1 minute. Scrape sides and bottom of the bowl, then add remaining chickpeas (you may leave some for garnish) and process until thick and quite smooth; 1 to 2 minutes.
Taste for salt and adjust as needed. Serve hummus with a drizzle of olive oil and dash of paprika. Store homemade hummus in an airtight container and refrigerate up to one week.
