#Parisa , you won't find it in many cookbooks. It's like a South Texas beef #tartare . Not really South Texas, more specifically, the area outside of San Antonio around the town of Castroville. #Castroville was founded by Alsatians in the mid 1800s who I'm sure brought a tartare like recipe and added the local flavors of chili peppers and cheese. But these #Alsatians considered themselves German not French. My mother's father's family is from #Alsace . I saw an Alsatian restaurant in CDMX on Tamaulipas & Michoacán, I looked at the menu but didn't go it. They did it right, more sauerkraut and pork than French but I doubt they have this as you probably can't find it anywhere more than 25 miles outside Castroville.
This is an easy recipe
1/2 pound ground beef with low fat content (very fresh, the butcher ground it for me today)
1/4 pound cheese
1/4 pound onion
2 jalapenos (serrano would work, too)
juice from large lime
Salt & pepper
Mix and let sit for an hour in the refrigerator
I was very tempted to mix in a little cilantro, maybe next time.
