Alliums are an absolute requirement around our house in most meals. We are fortunate to have one of the most flavorful wild members of this family growing in the mountains of Appalachia... the ramp. In place of garlic salt we make ramp salt each spring so we can infuse our food with its rich flavor year round.

Today I had slow food. What I love about artichokes is you have to take the time, if you’re eating each petal, to pull it off, dip in the melted ghee, and pull the goodness off. Slow food. We. Need. To. Slow. Down. Artichokes are a perfect vehicle to get you intimate with your food, to be present and engaged. I could eat them every day because I love that interchange, that personal relationship. The slowing down and savoring.
Artichokes contain a plethora of nutrients, minerals and phytonutrients like quercetin, gallic acid, and cyranin. Zeaxanthin, lutein, magnesium, potassium, folate and fiber, to name a few. In fact a medium-sized artichoke contains a whooping 7 grams of fiber, which is 28 percent of the daily recommended fiber.
The butter is a rich source of butyrate, which is a short-chain fatty acid (SCFA) and is beneficial for gut health, immune modulation, gene regulation, etc.
Garlic is the king of the allium family, along with onions, leeks, shallots, and green onion. It has strong antioxidant, anti-inflammatory,
Anticancer, antimicrobial activities. It protects the cardiovascular system as well.
I added some Colatura to the butter - an anchovy sauce from Italy that is so rich in umami, it’s hard not to pour it on everything! Anchovies are never farmed, so they are highly sustainable as they are caught in the wild. Rich in vitamin A, iron, selenium, niacin, and vitamin B12, a great source of omega-3-fatty acids, and polyunsaturated fats which can reduce the presence of LDL cholesterol.
The pleasure factor of this simple meal is hard to beat. It is well with my soul!
Look at this gorgeous allium....this beautiful, muddy garlic bulb. I'm so fortunate that my son's tutor also gardens and I receive gifts like this. It was absolutely perfect inside and I threw the entire bulb, chopped, over a tray of roasting summer veg. There are so many things to love about garlic beyond its flavour: how many patients will worry about their calcium intake (particularly when we remove dairy - that marketing trick worked a treat!) when not ONE has EVER mentioned getting enough sulphur in their diet? This is, of course, not their fault - nutrition education and the media coverage of it is often extremely imbalanced and agricultural industry led. This beautiful little bulb is a great source of sulphur which is a hugely important mineral for our entire body. Sulphur helps us to maintain strong and resilient hair - maybe try a bit more garlic/sulphur instead of yet another expensive hair product? A main player in the synthesis of glutathione (one of our body's most important self made antioxidants - vital for adequate immunity) - sulphur helps our body optimise production. And here's the silly industry bit....you know those energy drinks I detest so very much...with added taurine (oh pleeeeaaaase!!!): (taurine is an organic compound widely distributed in all our body's tissues which helps enable the proper functioning of our cardiovascular system, muscles and central nervous system - small job then hee hee!). Well garlic and its sulphur help the body make taurine too! You know what...nature is inherently modest...and that's the road you should follow when you decide what to eat or drink most of the time. Natural foods require no labels to show off their gifts to our health or to balancing our planet...they simple are. Very simple really isn't it? Beware of the show off foods - those which boast all they contain.
