Peixe á La Meuniére 
Ingredientes: - 4 filés de linguado ou tilápia
- 6 colheres (sopa) de manteiga
- 8 camarões médios
- 100 g de champignons
- 1 colher (sopa) de alcaparras
- gotas de suco de limão
- 1/3 xícara de vinho branco
- salsinha
- farinha de trigo
- sal e pimenta-do-reino

Modo de Preparo

Tempere os filés de linguado ou tilápia com sal e pimenta-do-reino. 
Corte os camarões em pedaços em os champignons em lâminas. Aqueça em uma frigideira 2 colheres de sopa de manteiga. 
Passe os peixes por farinha de trigo e retire o excesso. 
Quando a manteiga estiver borbulhando, doure os peixes dos dois lados. Retire da frigideira, coloque em uma travessa e mantenha aquecido. 
Faça o mesmo até terminarem os filés. 
Coloque na frigideira mais uma colher de manteiga e refogue rápidamente os cogumelos e os pedaços de camarão. Retire da frigideira e reserve. Acrescente à frigideira a manteiga restante e doure-a, retire do fogo e acrescente as alcaparras, camarões e champignons refogados. Tempere com sal e pimenta-do-reino. 
Regue os filés de peixe com gotas de limão, vinho branco e salpique com a salsinha.

À La Belle Meuniére, expressão em francês que caracteriza uma variação do prato À La Meuniére, surgiu de uma brincadeira de um gastrônomo francês do século XX, que considerava pobre e seca em demasia a "moleira tradicional", acrescentando camarões e champignons à receita original.
Curiosidade: A Meuniére = A Moleira (moça que trabalha num moinho de trigo).
Num conto infantil francês há uma história da "La Meuniére":
"Era uma vez uma moça muito bonita que trabalhava no moinho do pai e o rei queria desapropriá-los. O pai da moça contou ao rei que sua filha transformava a palha do trigo em fios de ouro.
O rei levou-a até um galpão pequeno e disse que, se ela não transformasse toda a palha daquele galpão em fios de ouro, no dia seguinte ela seria morta. E trancou-a lá dentro.
Naquela noite apareceu um duende no galpão e propôs à moça a transformação da palha em fios de ouro, mas em troca ela teria que lhe dar alguma coisa. Ela topou e, no dia seguinte, toda a palha havia se transformado em ouro.
O rei ficou impressionado, levou a moça a outros galpões ainda maiores e ordenou que ela transformasse a palha em fios de ouro.
Na terceira vez, o duende propôs, que ela lhe desse o seu primeiro filho com o rei. 
E ela topou.
O rei e a moça casaram-se e, após alguns meses, nasceu o primeiro filho do casal. Neste mesmo dia, o duende apareceu para buscar o filho e ela se recusou a dá-lo. 
Os dois tiveram uma conversa e o duende disse que a promessa seria desfeita caso a moça descobrisse o seu nome... Striped Bass “a la Meuniere”, which is a classic French preparation, usually with mild white fish.  Chopped lemon segments and juice, along with capers and parsley are added to browned butter to stop the cooking process, and then immediately poured over the just cooked fish. The nutty aroma of the browned butter, acidity of the lemon, freshness of the parsley and briny capers elevate a mild fish to the next level!

'Trout à la meunière' 🐟

One of the most favorite ways to prepare a trout here in Germany and also an important dish in the Creole cuisine, it is a real sophisticated dish, yet so easy to do. So if you've never done it, give it a try. 😉
.
You need 1 trout per serving (250-350g), salt, pepper, flour and clarified butter.
- If you're not familiar with catching your own trouts, you need them gutted, scaled and cleaned under cold water
- heat a pan that's big enough to 'accommodate' the whole fish to medium heat with clarified butter
- season trout with salt and pepper inside and out
- cover the outside in flour and shake off excess flour
- sauté the fish for about 5 min on the first side, turn cautiously and sauté the second side for about 3 min. If you can pull out the back fin with ease, the trout is done

I added some marinated shrimps after turning the fish and had some nice bread on the side. .
I didn't check with @cookiemreport, whether there will be cooking classes at #cookieislandfun, but maybe we can take this as an impromptu cooking event on #cookieislandsummer2017. 😁

I chose the turbot from Brittany as my main course. Having some of the most powerful tides brushing through shady sheltering, the water quality along the Brittany seafront is outstanding. Therefore, the locale nurtures some of the freshest seafood with firm texture and sweet aftertaste. Turbot also happens to be Chef Pic's favourite fish - she cooks it many different ways, and variations of it remain a mainstay on all her menus.

Tonight, Chef Pic decided to cook the turbot à la meunière, cooking the fish dusted with flour and sautéed in clarified butter to give it a golden color. This style of cooking allows Chef Pic to retain the turbot's distinct texture - bright white and firm flesh with a subtle flavor and medium fat content. Alongside the fish came buttered peas, beans and broad beans pea broth with bergamot leaf and kororima.
