Raspberry and black berry cashew cheese cake 💕🌸 probably one of my favorite during summer its a healthy alternative as its low in carbs, gluten free and refined sugar free.

Ingredients: 
Base: 
1 cup almond flour
1/2 cup melted dark chocolate
1/4 cup water
2 tbs maple syrup
2 tbs vanilla powder
2 tbs baking powder 
Mix all ingredients in a food processor for 30 seconds. Spray baking pan with coconut oil and add cake mix to fill 1/4 of the baking pan. Bake for 30 minutes. .

Blackberry layer:
1 cup cashews socked in water over night
3 tbs coconut cream
3 tbs maple syrup
1/2 cup fresh black berries 
Mix cashews in a food processor till very creamy. Add the other ingredients and mix for 45 seconds. .

Raspberry layer: 
1 cup raw cashews socked in water overnight
3 tbs coconut cream
3 tbs maple syrup
1/2 cup fresh raspberries
Mix cashews in a food processor till creamy. Add the other ingredients and mix for 30 seconds. 
Place the raspberry mix to the cake layer. 
Finally tip with frozen black berries and blue berries. Happy Friday!

Hy everybody 🙋 You know what time it is... #pizzafriday 🙌 How about a delicious pizza with spinach, sun-dried tomatoes and roasted pine nuts 😊? Vegan.DIY: Pizza Crust.
- makes 2 large or 4 small ones.
- activate 7g dry yeast in 2 cups luke-warm water, 1 Tsp agave nectar and 3 Tbsp olive oil (about 7-10 minutes).
- add 2.5 cups all-purpose flour, 1.5 cups whole-meal wheat flour and 1 Tsp salt.
- mix until dough comes together and then gently knead on a flour-dusted surface for 3-5 minutes (dough should be soft, elastic and a little sticky).
- form a dough ball and place it in a slightly greased bowl.
- let rest for 1-2 hours until dough has doubled in size.
- cut dough into 2 or 4 pieces and spread them out on a flour-dusted surface (DO NOT ROLL! Use your hands); middle part should be around 0.5cm thick, edge can be up to 2 cm, depends on your preference.
- add some marinara sauce and your favorite toppings.
- bake at 270°C/520°F for 5-7 minutes or until golden brown and slightly crispy.
- enjoy 😊

Butterfly pea flower + pink pitaya powder tofu noodles

2 avocados
1 mango
1/2 cup fresh cilantro
1/4 cup coconut milk
2 tbsp lime juice
2 cloves garlic
1/4 tsp cumin

A question I get asked all the time is, “How do you make time to eat healthy?” The answer to this is in the question itself - I make time. I firmly believe that people make time for the things they want to do. But sometimes, people don’t realize what they’re actually choosing to spend time on. I’m definitely guilty of this. How many of us spend too much time on our phones or social media? How many of us spend too much time worrying? Could that time be spent instead with loved ones, or cooking a healthy meal? Little time “swaps” like this can add up to some really big things. This life lesson I’ve been learning lately is how important it is to be selective with your time. I have wasted WAY too much time in my life 1. Worrying, 2. Waiting around for the “perfect” time to do something, 3. Waiting for things that will never happen, and 4. Fretting over what people think of me. It sounds so obvious when I write it out, but it’s better to learn it late than never. I refuse to devote any more time to things/people/thoughts that subtract from my life rather than add to it. Once you've cooked your rice or noodz, drain the water off and mix in some butterfly pea powder. Stir it through. Use a little for a gentle hue, or keep adding more for an intense colour 💙

Just made these brownies again for a friend. I forgot how healthy and delicious they are. Super gooey and chewy in the center and a little crunchy on the outside. Made with tahini and chickpeas?! when in doubt, this is lunch! I love to just spiralize a sweet potato and toss a bunch of veggies and my favorite garlic chicken sausages (from Trader Joe’s) in a skillet! so easy and delicious. 😌

So yesterday my wonderful friend @emmajanetanner brought me a squash, homegrown in her parents’ garden down in Cornwall. I have to say it was hands down the best squash I’ve ever tasted...so much flavour and a melt-in-your-mouth texture that I can’t even explain! It’s only really been this summer that I’ve begun to realise just how much better home grown or locally grown produce tastes, as well as of course being more economical, environmentally friendly and better for you too. It’s made me want to start growing some of my own veg, although truthfully I have absolutely no idea where to start. So my question is...do any of you grow your own? What do you grow? And what are some easy things to start with for someone who’s fingers are anything but green? Comment below and let me know 😊 alternatively, if anyone wants to swap their home grown produce for baked goods then I’m totally game 😂

Sheet Pan Garlic Herb Butter Chicken & Potatoes😍

1/3 cup low-sodium chicken broth or stock
1/4 cup unsalted butter, melted (reduced fat or light butter if counting calories/fat)
1 tablespoon finely chopped garlic (or 4 cloves)
2 teaspoons chopped fresh parsley
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
1/2 teaspoon salt (adjust to your tastes)
Fresh ground black pepper, to season
4 x 5 ounce  150 grams boneless, skinless chicken breasts
1 pound (500 grams) baby potatoes, peeled and quartered into 1-inch pieces (Yukon gold or White Carisma Potatoes work the best)
1 pound (500 grams) green beans (or asparagus)
Instructions
Preheat oven to 200°C  400°F. Lightly grease a baking tray / sheet with cooking oil spray, or a light coating of oil. Set aside.
Combine together the butter, broth (or stock), garlic, parsley, thyme and rosemary together in a bowl.
Place chicken on the baking sheet and arrange the potatoes all around the chicken. Toss 1/2 cup of sauce through the chicken and potatoes, and season well with salt and pepper. Lightly spray all over with olive oil spray or cooking oil spray.
Bake in preheated oven for 15 minutes or when potatoes just start to become golden. 
Carefully remove baking tray from the oven and flip each chicken breast. Move the potatoes to one side and place the green beans around the chicken on the other side of the baking sheet. Pour the remaining garlic herb butter sauce over the beans, toss well and return to the oven to broil (or grill) on medium-high heat for a further 10 minutes, or until chicken is cooked through (no longer pink in the middle) and potatoes are for tender.
Broil (or grill) for 2-3 minutes until chicken is golden and potatoes crisp.
Sprinkle with fresh chopped herbs (optional), and serve immediately with pan juices.😋❤️
