Homemade Taco Sauce + Fiesta Grilled Chicken Drumsticks
Prep time: 10 minutes | Cook time: 20 minutes
2.5 pounds chicken drumsticks
1 13.4oz can tomato sauce
1 cup chicken broth (check labels)
1/2 tablespoon apple cider vinegar (or white wine vinegar)
1 tablespoon chili powder
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon black pepper
1/2 teaspoon cayenne
1/2 teaspoon chipotle powder
1/2 teaspoon onion powder
Add broth, tomato sauce and spices to a medium sauce pan over medium heat
Combine and let cook for 10 minutes or until sauce has thickened a bit
Remove from heat and let cool until no longer steaming
In a large ziplock bag or a large bowl, combine chicken drumsticks and 1 and 1/2 cups of sauce, or until dummies are covered and coated completely
Refrigerate and let marinate for at least a half hour, or overnight
The remainder of the sauce can be covered and stored in the fridge for up to a week, or frozen
Heat grill to medium, or preheat oven to 350 degrees F.
Grill for 7 minutes on each side, or until fully cooked to 165 degrees F. internal temp.
Or, bake on a baking sheet for 40 minutes, flipping halfway through, or until fully cooked
Remaining taco sauce can be stored in the fridge for 7 days

I haven't paid much attention to the crap I've been eating, although I sort of tried to keep portion control in mind so I didn't undo all of my progress from this year. I'm bouncing around 215-220. This past weekend I was my friend's best (wo)man in her wedding, which has been planned for a while. However, about a month ago, their minister backed out. Despite my sometimes near crippling anxiety, I stepped up to the plate because I didn't want them to deal with that stress with a wedding right around the corner. So basically, I've been in a constant panic for a month...but the wedding is over now and by some magical power, I did it! I didn't mumble, or speak too quietly...I was actually successful. I challenged my anxiety that day and won. I think I did even better with the reception toast too. I know if I can do that, I can keep trying this lifestyle and keep working on becoming a healthier, more functional me. Stay tuned. #keto#accountability#anxiety#overcomingfear

🤦🏻♀️I can't believe I'm posting this. It's a vulnerable place to voluntarily put myself. This is obviously not some bragging post from someone with a perfect body, just a middle aged mom who is working on it. But, the pic on the left is me, just 4 weeks ago. The pic on the right is me today. It's tough for me to look at! But, can you see a difference? I know I can. In just 4 weeks of clean eating, cardio & strength training, I've lost the muffin top, lost quite a bit of body fat, cellulite is starting to smooth out and reduce, I've gained muscle, lost pounds, added years to my life, and I'm living in a body that I wouldn't want to completely cover up on the beach. I'm not at my goal by any means, still very far from it, but im posting this in the hopes that maybe one person who previously thought (like me) that they couldn't make a change, gets inspired. I'm living my best life and feeling so good and so healthy & happy. (Ps, it's just a body, in a bathing suit. We all have one. Don't be so shocked. I’m doing good despite the Lalaland trip. I’m back to 164.9 lbs after a 3 lb gain during the trip.
I really just want to hit 159 by Nov 7, which is when I see my surgeon for my 3 year post-op check up. That’s my goal one. Then get to 150 by end of year. I haven’t given up on 145 goal. Just breaking it up in parts. So it doesn’t feel so futile.

What makes you think you're a good person? What rubric are you evaluating yourself against? Who is checking your evaluation? No one. It's only you, a self evaluation you have to be proud of, or at least live with. This is not to say that you should do crazy and evil things because no one is checking after you, but it's to suggest that perhaps your RUBRIC needs re-evaluating. How often do you revise your personal evaluation standards? (i.e. How important compassion is. Who deserves it? When?) You're living your life according to ideas you have about what's right and wrong. Perhaps it's time to recognize them as simple ideas that can and possibly should evolve. * * * * *

There are things you do each and every day that you don’t even know you do. You’re on autopilot. Taking care of business shuffling work, life, family and more 24/7. As if you’re traveling on a plane, 400mph isn’t even noticeable. This is velocity.✈️
Go from 0-60 in your car though, and you’ll definitely notice. This is acceleration.🏎💨
Respect and value the velocity at which you are traveling through life. You do mind-blowing 🤯things each and every day without even noticing. The Fitness Industry is a multi billion dollars industry. Which means the people that are putting out products and services are doing something right, they are getting your attention and making you buy the crap they shove in your face. .
As a fitness professional I am equipped with a special lens to see beyond the fluff of the industry. To be honest some of the fluff is needed, it adds the unique ability to personalize your fitness journey. .
So, here is the one catch. Guess what? You’ve been bamboozled for too long. There is no magic bullet, secret formula or quick fix. You can’t shake away weight, get sexy abs with 5 easy exercises, lose 30 pounds in a week or gain 10 pounds of muscle in a couple days. It’ll be nice if we could buy health and wellness in a convenient package on Amazon. But it doesn’t work this way. The fitness industry is constantly bombarded with “quick fixes” and overnight solutions or as I like to refer to it “Fitness Fluff.” These forms of marketing have distorted our sense of what it really takes to achieve our fitness goals. Society has lost sight of simple fitness foundations like being active, drinking water, sleep, portion size meals and most of all being happy with ourselves.
I'm finishing up a major project and now that it's coming to an end, my mind is trying to throw me procrastination, rationalization, and stupid excuses so I don't finish it. That's how I know that it's super important that I DO finish it. I'll be done today because I will not go to bed until it's done. What's your mind talking you out of finishing? #SelfSabotageSlayer

How to use leftovers 🌯🌮🥙 to make meal time easy? 🍽 Make avocado tostados! 🤤🥑🌮 Here’s the dealio👩🏻🍳👨🏽🍳• 🍴Preheat your oven to 450F 🏡 • 🍴Make your Qween-wah spread (one of F’s specialties with a new twist). In a bowl, smash 1-2 ripe avocados 🥑 + a dash of salt + squeeze of fresh lemon/lime 🍋1-2 tbsp of your favorite nuts (chopped) + optional 1 amount of dried fruit (we used raisins) + 1/2-1 cup of grains (tri-colores quinoa used here) = set aside. • 🍴Using a large baking sheet, spread a small amount of oil (coconut used here) + place your tortillas on top (@sietefoods almond flour used which are bang-bang good with just 5 🤚🏽ingredients!!! 🙏🏻🤓) + Place in hot oven for 5 minutes + check in to see if they are crisp, if not check in 2-3 more minutes as they will burn if you leave too long. • 🍴While the wraps are roasting in the oven, let’s warm up your leftover veggies on the stove. We had a variety of individually roasted veggies, so I heated those separately. Use whatever you have in the fridge. • 🍴Now that everything is warm 🔥... spread a nice layer of Qween-wah over your toasted wrap. Next, top with a generous amount of greens (arugula seen here) + top with warmed veggies. Boom, time to dig in. 😋• 10-minute meal you can make with random ingredients and it won’t feel like boring leftovers 😎😎 • •

Are you guilty of spreading and believing misinformation?
If so, STOP IT!
No food is inherently good ✅ or bad ❌ for you. The danger is in the dosage of those foods. The majority of your food (80%) should be wholesome and nutrient dense, if you want good health, skin, energy etc, but the other 20% can be just pure junk that you love. This creates sustainability and enjoyment
No food is super! Kale, goji berries, avocados, chia seeds, unicorn 🦄 shit etc.
There is no superior way to lose fat. Keto, IFFYM, vegan, gluten free etc. They all do the same thing...create a calorie deficit. Eat foods you enjoy 😊, don’t cut out foods without good reason (medically intolerant) if you like them because so and so said they were bad
Nobody needs to detox. You liver and kidneys do a good job of that by themselves. However if you do drink a lot, it may be a wise move to reign that in a bit. You’ll feel better for it
Carbs are not the enemy, they are your friend. It’s the body’s primary source of energy. Try doing a super low carb diet for a bit and see how you feel? Guaranteed it’s dog shit 💩 So eat them and maybe look at positioning them around times you need them most, pre and post training and before bed 🛌 👇🏻
Eating fat does not make you fat. Fat plays a very important role in your body, various vitamins are only fat soluble so make sure you don’t avoid it
Protein🍗🥚🥩does not harm your kidneys, unless you have a pre existing condition. Most people don’t eat enough protein and the RDA is well below what it should be
The moral of the story, question why someone says something! Don’t take it at face value. This past week I was chatting with my coach and just reflecting over the past year, feeling really proud of what I’ve accomplished. The girl I was a year ago is not the girl I am today and I’m so thankful for that.
Not because I didn’t like that girl I was a year ago, but because I’ve worked my butt off to get where I am today. It’s not about the side by side pictures or the physical appearance I’m proud of, although I do work hard to stay healthy and strong. It’s more about the mental & emotional growth.
Growth always comes with pains, it comes with a lot of freaking hard work and a lot of questioning and twists and turns.
But deep down we all have that voice, that we know is leading us in the direction we’re supposed to go.
This past year I’ve listened to that voice more than ever before. That voice that is guiding me through life and I know will never steer me wrong if I just listen and learn along the way.
As in life, this has been recently really true in my stepping into intuitive eating.
I put in A LOT of time and hard work to really be in tune with my body and what it needs.
Of course I’m still learning and always trying to get better, but I feel training my body and learning what it needs over years of hard work, I’ve been able to be super successful with this thus far.
A few keys points I’ve been living by while eating this way:
⭐️90%+ of my foods are Whole Foods
⭐️Veggies/greens at at least 2 meals
⭐️protein at every meal
⭐️checks and balances: if I have a meal that is super carb heavy, I will balance it out at another meal with less carbs- I’ve learned what the proper balance through my day looks like!
⭐️Over the years I know I do best working out in the a.m. fasted, eating a bigger breakfast post, a small lunch and another more substantial meal at dinner with a small snack after. This is the pattern I’ve been following majority of days.
⭐️Water! Is basically my only beverage through the day aside from 1, maybe 2 Cups of coffee! ⭐️If I have an abnormal day- I just get back to routine the next and don’t fret over it!

Wanna know something... Lately things have been uber stressful for me personally and for my family. A little insight here:
🏥 Work has been emotionally tolling
👧🏼 My daughter has been to 3-4 appointments each week + an emergency room visit
👦🏻 My son had the back to school germs which lead us all to have sleepless nights
💁🏼♀️ My back flared up, my sleep
😴 has been awful due to stress + shift work
So yea, my life has been beyond hectic to say the least. Many say to me, you work part time as a nurse what do you do with “all your time off”.... 🙄 well to be quite frank. I don’t recall the last time I stayed home an entire day without having to leave for something.
BUT, with this being said... there has been ONE consistent thing in my life that has kept me SANE and gave me an outlet for burn off the stress and get those endorphins (happy vibes) flowing.
I must thank MY TRIBE in my ACCOUNTABILITY groups. Without this INCREDIBLE COMMUNITY of women I’d be lost.
