I was being tested today. My level of patience, and how long it would take until I was stomping my feet like an irate toddler in the kitchen, covered in smoothie 😖. Blueberries, zucchini, spinach, cherries, protein powder, dehydrated beet powder. All I had on hand, all frozen, and all fabulous.
This is probably our favorite meal...the thing that all three of us LOVE. I call it Taco Scramble, although I have no idea why...it's nothing like a taco. And while it's kind of a lot of chopping, it's a one skillet, easy clean up lunch that doesn't undo all the cleaning I just did from breakfast.
1-Add some olive oil to a skillet and brown ground beef. While it's Browning, chop an onion.
2- Once the beef is cooked, add the onion and some garlic powder or minced garlic (Costco has a big tub of it we buy). While the onion sweats, chop up some colorful peppers.
3-Add the peppers and continue to saute. While that cooks, chop some zucchini.
4-Add the zucchini. Season with your choice of spices (I did salt, pepper, and cumin). Add a pat of butter (Kerrygold, people!!) 5- Saute until the desired texture is reached. Enjoy with sauerkraut. 😋
Like, we ate almost a whole pan of it. The three of us. And one of us is a baby.

Pastel de calabacín con jamón York y 🧀
- 1 calabacín córtalo en láminas finitas, si tienes mandolina mejor, si no con el pela verduras te salen las laminas muy bien.
- Lonchas de jamón york
- Mozzarella cortada en trocitos pequeños - Queso en lonchas
Cogemos las lonchas de calabacín las pasamos por harina y las ponemos en un molde de plum cake, hasta tapar el fondo encima ponemos el jamón , por encima ponemos los trocitos de mozzarella
y encima las lonchas de queso .Vamos colocando capas hasta terminar. Precalentamos el horno 180 grados y lo metemos unos 35 minutos . Espero que os guste😋😋😋😋

May be a bit of an unpopular opinion but I actually LOVE cold weather and snow! Today’s lunch (and dinner last night) ~Pesto Zucchini Noodles w/ Chicken~ showing some holiday spirit.💚❤️💚❤️
Super easy to make! I cooked the chicken breasts yesterday so all I had to do was quickly sauté the noodles during my lunch break. I’ve got Oral Surgery rotation so spending the day yanking teeth 🦷🤗
🔺Season chicken breasts with salt, pepper, and garlic powder. Sear in a cast iron for ~5 minutes each side then finish baking in the oven for 20-25min or until cooked through at 375.
🔺Saute zucchini spirals in 1 tbsp olive oil.
🔺Add @traderjoes vegan kale, cashew & basil pesto.
🔺Slice cherry tomatoes and green onion for garnish.
