Six weeks ago today I started this journey. I am so happy with my progress 🙌🏼!! I feel better and I can tell a difference already in my clothes. Thank you @weightwatchers for giving me the tools. This meal was awesome! 😋 I know it is basic but hey basic is good 😉 Panko breaded and baked chicken tenders, sweet potato fries, corn, peas and on the side sugar bbq sauce and no sugar added ketchup 😊 8 smartpoints and so satisfying
Fit Girl Parm for dinner! Side of broccoli and cauliflower gnocchi! I cooked way too much gnocchi so I ate half and will have the rest with the rest of my leftovers for lunch tomorrow! Recipe from the #fitgirlscookbook 2sp for the chicken, 3sp for the gnocchi, 1sp for the cheese and 0sp for the broccoli!
Ugh. I didn’t even want to record this today. I have stayed within my points every day this week and this past weekend. I’m thinking I did have a huge intake of sodium over the weekend... #soysauce ... and that can take a good 3 or 4 days to regulate. Bummed but not hopeless! Going to keep doing my very best, the results will follow!
This takes a bit of time to cook but trust me it’s WORTH IT!! As usual the recipe was found in the @weightwatchers app discover recipe section!

In a pot bring 5c of mushroom broth to a boil, lower heat to low and cover.
In another pot add a few sprays of cooking spray and melt 1tsp of unsalted butter over medium heat. Add 1 small chopped onion and stir still starting to caramelized about 10 min. The add 1lbs of thinly sliced Cremini mushrooms and stir for about 5 minutes. Then add 1/3c white wine bring to a boil then lower the heat to low and stir till the liquid is reduced by half. Remove veggies from pot then in same pot add another 1tsp of unsalted butter and melt over medium heat. Stir in 1 1/2 c arborio rice and coat in butter. Then add 1/2c of the broth and stir until absorbed by rice. Continue adding broth and stirring till absorbed until all broth is added. Aprox 30 min. Once rice is still a bit chewy and not mushy add the veggies back in and add 1/2c grated Parmesan cheese. Garnish with parsley and serve hot! 1 1/3 c per serving! A couple of recent dinners made at home: burger with veggie rice, chili, chicken enchiladas and salmon and veggies. Trying to get back in the swing of cooking at home more, this summer has been fun but a doozy!
Dinner and Dessert! Dessert pictures first! CHOCOLATE!!!!!
1 medium banana
1 Tablespoon unsweetened cocoa powder
2 Tbl Peanut Butter powder
1 pack of favorite sweetener(optional)
1/2 teaspoon vanilla
5 grams dark chocolate chips(about 1 tsp)
I whirl this all together in my mini food chopper and pour into a 1 cup sprayed ramekin or mug.
Wave it for about 90 seconds
This came out to be 3 sp with almond reddiwhip in the WW recipebuilder.
Dinner I found in the WW app. Just search shrimp and zucchini and Greek Shrimp with veggies and feta come up! So good. The mug cake is dairy free and dinner is dairy free without the feta. .
I was stuck on what to do for dinner tonight because I didn’t plan anything, so I ran to the food store and grabbed a precooked chicken! They are the best in a crunch! 👍🏻
Dinner was a grand total of ✌🏻 points! Chicken, green beans, @ghughessugarfree bbq, and half of this serving of @littlepotatoco potatoes!
Lunch was delicious! I ate my ham and cheese on a toasted English muffin! Wowzas! I don’t know why I haven’t done that before! Paired with grapes, an apple, and mini cheese balls for 6 points.
Breakfast was a banana and @kelloggsus Special K pastry crisps for 4 points. I love this bar! It tastes like a pop tart! 😍
I’ve been pretty happy with my choices lately and am really hoping it shows on the scale this weekend! 🤞🏻

Happy Weekly Wednesday! Today's Blog post is about Ryan and I getting the "okay" from our doctors to resume normal activity pre-surgery and pre-baby! So all three of us are 6 weeks out! (No pun intended 😂😉) We spent some quality time with family this weekend ❤ Little Brooklyn was smitten by Louis and would have held him the whole night if we would've let her 😘 Ryan and I went on our 1st date post-baby! It was really weird to leave Louis with someone besides Ryan 😳 but we did it! I have progress photos up on the Blog and talk a little bit about PP 👍Our first family trip is this weekend and we can't wait! Any guesses as to where we're going? Always always remember that you just have to take that first step to getting back on track. If you’ve missed a few workouts, had a few great days, it’s ok - it happens. The key is to get back to the grind as quickly as you realize the slip - don’t let it become a slide or a fall (and even if you do, again, take that step out in the right direction and suddenly you’re back on track)

Dinner again was a seafood feast for the books - rockfish ceviche (I avoided the fried tortilla things on top), pan-seared halibut with asparagus (I traded the grains for extra greens), and a local IPA. I wish I would have asked for no butter and minimal oil for the main’s preparation - but as it was, it was divine 😍🤤 I’m trying to push myself to be more forgiving and pushing through feelings of guilt when enjoying good food - it’s hard. It’s a process. I’m not there yet and that’s ok - the edge keeps me mindful and aware of what I’m consuming but I also know the guilt I feel when I eat certain meals is absolutely not healthy. It’s all about balance and trying to enjoy the moments as much as possible. Portland has filled me with so much joy and I am very sad to leave such a magical place.
