Tb to June 3 in Poland 🇵🇱 when I was feeling great and having a wonderful day with my cousin (my god son was our photographer 😜)— ever since being back I’ve had 6 days of an extreme migraine to the point I was going to go to emergency today because I thought my head was gonna explode at work. (Side note: I’ve never experienced a migraine even close to this before) / I ended up taking a nap and begging the universe that my pain stops. I woke up and somehow it wasn’t as severe anymore and the first time in 6 days I had some rest from the pain. - I’m hoping it’s gonna pass now and that I do not need to seek help. I’m so happy to be better I finally get to hang out with a friend for the first time since being back from Poland and gonna get myself a vegan burger and fries 👊🏼🍔🍟🌱😍.. I cherish the good moments because I know just how awful the bad ones can be 💋
MUITAS CORES: leguminho é vida! 🥕🥦 #nofilter Sempre que rola almoço de família na casa de Malu nos propomos a fazer esse legumes que postamos no story. É uma receita bem simples e deliciosa. Sucesso! APENAS FAÇAM!
Usamos 👩🏾🍳👨🏻🍳: .
▫️2 cenouras grandes
▫️2 cebolas roxas
▫️5 dentes de alho (se gostar)
▫️2 cs de azeite
▫️1 cs de páprica defumada
▫️1 cs de açafrão
▫️Sal grosso ou rosa do himalaia a gosto
▫️Pimenta a gosto
▫️Alecrim a gosto
Primeiro higienizamos os legumes, cortamos a cenoura em tiras, a abobrinha, o brócolis e a cebola em pedaços médios, além de descascar o alho. Depois untamos a forma com 1 cs de azeite, colocamos os legumes e os temperos e regamos com a outra cs. Depois, mexemos com as mãos a fim de que ficasse tudo meladinho com tempero e azeite. E forno! Cerca de 30’ em temperatura alta. Abrindo o forno para dar uma mexida vez ou outra. .
Essas quantidades serviram 6 pessoas bem e ainda sobrou um pouco para nosso almoço de amanhã. Vai bem também fazer um molhinho cremoso para acompanhar.
Ok guys. Best Mexican food we’ve had in a looong time and it’s NOT in Seattle. Nestled in an old building in the charming town of La Conner is @santocoyotelaconner🌿 Mexican food made with love and care by a super sweet family who not only has excellent recipes, but knows how to make them vegan as well. No reliance on cheese and cream here, they are the real deal. We had at least 6 or 7 entrees to choose from and they were willing to make even more vegan upon request. Guacamole was made fresh at the table (best I’ve had in many years) and the chips were warm and salsa perfectly spiced. Nick had unbelievable chickpea gorditas (also available with lentils or nopales) and I had veggie fajitas with black beans and rice (all vegan!). Our waitress Crystal said they have many vegans in their family and it’s important to them to offer plentiful veggie options. Bolo de cenoura sem leite e sem ovos fofinho e que cresce, com calda cremosa de brigadeiro? TEMOS! Anota aí 🐰
Ingredientes para o bolo:
🥕 2 xíc. de farinha
🥕 1 colher de sopa de fermento químico
🥕 2 xíc. de açúcar
🥕 2 cenouras grandes
🥕 3/4 de xíc. de óleo (usei girassol)
🥕 1 xíc. de água ou leite vegetal
Ingredientes para a calda:
🥕 1 inhame grande cozido
🥕 Água do cozimento
🥕 1 colher de óleo de coco
🥕 Cacau 50% em pó
🥕 Açúcar à gosto
Modo de preparo:
Bata os ingredientes molhados, o açúcar e as cenouras no liquidificador e reserve;
Peneire a farinha e o fermento em um bowl, e depois acrescente a mistura molhada e mexa delicadamente para incorporar os ingredientes.
Unte uma forma de 18 cm com óleo e farinha, acrescente a massa e leve ao forno pré-aquecido à 180 graus por aprox. 40 minutos.
Pra calda eu bati o inhame cozido com um pouco da água do cozimento, coloque a água aos poucos até obter a consistência desejada de um creme; Coloque o óleo de coco em uma panela, depois acrescente o creme de inhame e o açúcar, assim que começar a borbulhar acrescente o cacau e misture por uns 5 minutos e despeje por cima do bolo. ❤️
I love me a good grocery shopping trip on a Sunday!
If there’s one thing I love to do on the weekends it’s grocery shop/ meal prep. It sets my entire week up for success, limits the last minute reach for something unhealthy because I don’t want to make anything, and it helps my anxiety around food (if I don’t have to think about it as much or make as many decisions I’m much better off!)
My shopping list stays the same most of the time : spinach/ kale, mushrooms, tomatoes, carrots, some sort of fruit for the week, eggs, and then usually something that catches my eye that looks like a good deal —> this week the @kodiakcakes were the find; not a produce but a yummy carb that also has protein and another easy fix for you sweet tooth’s out there!
I am all about budgeting when it comes to eating. When you are a vegetarian and eat carrots like they’re candy, produce shopping in bulk is where it’s at! If there’s one thing I can say about eating healthy here in the US compared to back in London is that it is definitely way more expensive.
