I haven’t had ravioli since turning vegan but thanks to @waitroseandpartners I no longer have to miss out 😍 This is their new spinach ravioli, which I had with broad beans & edamame beans and drizzled with olive oil, balsamic glaze, chilli flakes & nooch👌🏼 Needless to say I’ll be having this again very soon 🤤

Pumpkin spiced cupcakes & cinnamon cream cheese frosting 🧡 Perfect to get you in the autumnal mood and they’re super tasty as well!
140g plain flour
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp salt
1/2 tbsp baking powder
1/4 tsp bicarbonate of soda
100g caster sugar
2 1/2 tbsp brown sugar
55g butter, softened
1 chia seed egg (1 tbsp @naturesheartsuperfoods chia seeds mixed with 3 tablespoons of water)
100g @alpro soy milk
140g pureed pumpkin
100g @buteislandfoods original ‘cream cheese’
100g Trex vegetable fat, softened
185g icing sugar
1/2 tsp vanilla extract
1 tsp ground cinnamon
Preheat the oven to 180 degrees. Line pan with 12 cupcake cases (I got my copper ones on Amazon). Sift together the flour, spices, salt, baking powder & bicarbonate of soda in a bowl.
Using an electric mixer, beat the butter and sugars in a large bowl until light and fluffy. Add the chia seed egg and mix well, then add the milk and pumpkin puree.
Stir in the flour mixture until combined, be careful not to over mix! Pour the mixture into the prepared cupcake cases.
Bake for about 25 minutes until they are golden brown. Allow to cool on a wire rack.
While the cupcakes are cooling, make the icing by adding the Trex and ‘cream cheese’ and mix with an electric mixture until smooth. Then add the icing sugar a little bit at a time until it is all mixed in. Finally add in the vanilla and cinnamon and beat until it’s thick and fluffy. Allow the cupcakes to completely cool before icing!

I went to the Boston Book Festival this weekend and was so happy when I found the @bonme truck. They had 2 vegan protein options- tofu and chickpeas! The cashier recommended the chickpeas so I went for those and wow they were so good!! I definitely want to go back and try the tofu at some point tho! This was a great meal and very reasonably priced considering how much food there was in the box!
Lately it has been a bit cold, and with exams i havnt had much time to spend in the kitchen, which is why at the moment i am loving and living on one pot/dish oven dishes. .
This one is my absolute favorite, and its packed with all the nutrients needed to avoid becoming malnourished during stressful exam times 😁 .
One pot morrocan casserole: serves 4
Preheat oven to 190° .
1x Onion chopped
1x Clove garlic
1tsp Ginger root
1/3 Cilantro /coriander
1/2 tsp Cinnamon
1 tsp Salt
1 tsp pepper
1 tsp groud cumin
1 tsp cayenne pepper
1 tsp paprika (If you enjoy a liitle kick like me, add chilli flakes 😉)
3x Tomatoes chopped
2x Carrots chopped
5x Kale leaves chopped
1/2 x Large butternut chopped
1 1/2 Cups dry lentils
10x Halved Brussels sprouts
2 1/2 cups vegetable stock .
Put all ingredients in the pot/dish, mix the ingredients around getting those delicious spices all over those vegetables. Cover the top of the pot/ dish with a piece of foil and put it into the oven for about 40 - 50 minites 😊🍒💚

💪🏻BULKING UPDATE- So I have been bulking irresponsibly since July🙊
Over the last month I have reeled it back in a bit started a lean bulk because it was getting pretttty dirty for a hot minute there😂 -
Calories are between 2,200-2,500. Making sure I hit a minimum of 2,000 on busier days. Carbs around 300-400g and fats are in the 50-80g range. Cardio is 1-2x a week or less for around 12-20 minutes. -
I am 5’1 around 111lbs last time I weighed myself. I have gained 3lbs since I started my bulk and plan on lean bulking into December and see how I am feeling/looking then and either cut or maintain. -
I know it can be hard for some women to gain weight especially after getting very lean. I was 15% body fat before I decided to bulk. I would guess I am around 17-18% right now. -
But if you have goals you have to get uncomfortable to make and see changes. My body has changed a lot since bulking but my strength is going up and I am steady hitting PRs every week and using progressive over load to build muscle so it is worth it💪🏻 -
During this bulk I am focusing on legs/glutes as well as back and shoulders. Been enjoying improvement season and I cant wait to see the gains come spring 👀💪🏻
Building the body of your dreams takes TIME. Added lean mass and building shape is hard af but it is worth it. Give yourself time. This is my second bulk since I started my fitness journey. Where are you guys at on your fitness journey? Cutting or bulking??! 👇🏻🌱💓
