This cutie wanted to get down and walk away the entire time we sat for lunch. 🤪 but he’s so darn cute. 😉 good thing! Haha.
I must say that I love love love eating plant based. First and foremost- it’s SO much fun. We get to eat much more creative things. And I’ve learned SO much about different kinds of veggies and grains. I feel so much healthier. I just love it. A year ago- if someone said I’d be eating this way- I would have doubted it seriously. Lol. It seemed too hard, and honestly- too depriving. But it’s very much the opposite. 😍😍✌🏼✌🏼 I feel free!
A cool thing I didn’t realize existed until we started eating vegan is home made almond milk ricotta cheese. 😍😍😍😍 oh my goodness gracious. Yum yum yum.
Anyway- we had a great day at church together @theharbourchurch (thanks tar! @tarrahernandez

CINNAMON, APPLE ROSE MUFFINS (gf, df)🍎•

Little shades of grey everywhere.
I’ve experienced some dark greys this past week when I got the call that my mom fell and broke her hip. It’s hard because I am sitting on the other side of the world and can’t see her right now. She’s 73, but strong and healthy. She is the strongest person I know and one thing I’ve learned from her is that our greatest weapon against any grey in our life is gratitude.
So this morning I am pushing trough the grey to grab hold of gratitude.
She loves roses so these muffins are for you mom!
CINNAMON, APPLE ROSE MUFFINS (gf, df)
1 gf Muffin mix. (Use your favorite vanilla muffin mix. I love the gf muffin mix by @kingarthurflour
1 teaspoon Cinnamon
2-3 Apples (I used gala)
•Turn on oven to temperature instruction on your muffin mix container. •Follow the instruction on the mix. •Add 1 teaspoon of Cinnamon to mixture while mixing. •Place cupcake or muffin liners in pan. •Fill each liner 3/4 to top.
•Cut apples in half and remove the seeds with a spoon. •slice each half into very thin slices. •place them in a glass bowl and pour boiling water over them. Let them sit for 5 min to soften up a little.
•pour out hot water. •take a slice of apple and roll it up the form the center of the rose. Press it into the middle of the raw muffin dough. •start building your rose by bending each slice to form a half circle and pressing it into the dough around the center rolled up apple piece.
•start from the inside out building from the center.
•keep doing it until you have a rose.
•follow instructions for baking.

Did a super awesome coffee tasting and laughed my self silly with all the caffeine! Took a selfie at the coolest outside washroom at True Food. Then of course fit in some time to hit ANOTHER PR in the gym! .

If you haven’t heard of True Food Kitchen, you are not alone. I hadn’t heard of this gem of a place either until a couple people recommended it. They raved about it so much that we had to go. To escape the unbearable heat last Saturday, we decided to go down to Santa Monica and have a nice lunch away from the hot valley. @true_food_kitchen did not disappoint. Their food was great, customer service was on point, and the fact that they had decomposable straws that were made from corn won my heart! This place is definitely health conscious and there is something for anyone, from Vegan to Meat Lover’s. APRICOT, PEACH, GINGER KOMBUCHA REFRESHER
3 ripe and sweet Apricots
1 white Peach or Nectarine (no skin or pit)
1 inch piece of Ginger (remove skin)
1/2 - 3/4 cup Water
3 cups Ginger Kombucha
INSTRUCTIONS: •Blend together Apricots, Peach/Nectarine, Ginger and Water until smooth.
•Strain through sieve. I use a spoon to press all the juice through the sieve. •Divide evenly into 4 glasses.
•Add Ginger Kombucha to fill glasses to the top.
•Add ice cubes if preferred. •Cut thin piece of Apricot and place on rim of glass. •

Rarely do I see an item on a dessert menu, especially a strawberry-rhubarb tart with coconut ice cream 😛 that is gluten free.. dairy free.. and vegan. BOOM 💥

I don’t have celiac disease, or lactose intolerance ➡️ I focus on how I want to FEEL when I’m finished eating.. especially when I’m out having fun and spending money on good food.
Eating dinner and/or dessert shouldn’t make you uncomfortable.
It should make you feel nourished, relaxed, and give you some good energy once you’re done digesting.
Finding the right foods and the right amounts isn’t easy for everyone, but it’s something we can figure out together. Take your energy back! 😙
