Low carb Strawberry Jam .
2 cups frozen mixed berries (fresh work, too; I used strawberries)
1 teaspoon fresh lemon juice
2 tablespoons raw honey (I used Stevia extract; more or less to taste)
2 tablespoons chia seeds
1. Place the fruit, lemon juice, and honey (Stevia extract) in a small saucepan over medium-high heat. Simmer 15 minutes until it bubbles and breaks down.
2. Remove from the heat and stir in the chia seeds until well combined, then let it sit at least 15 minutes to allow the chia seeds to gelatinize.
It will keep in an airtight glass container in the refrigerator up to 10 days.

You guys, this is my all time FAVE snack. Charred shishito peppers. 🌶They take about 5 minutes on the grill, are mild, and effing delicious.
I use a grill mat so they can’t slide through the cracks, and eat with any kind of Asian inspired dipping sauce.
This one has soy, rice wine vinegar, mirin, lemon, agave nectar, and sesame oil.
