At AltaMed's Grand Tasting, a food and wine matching dinner, the highly rated Otero Ramos 2013 Matuasto-Malbec Reserva was paired with a trio of appetizers created by Venezuelan Chef Tati Polo:

Arugula, sprouts and crispy radishes burrata salad with berry balsamic vinaigrette
This deep purple red wine with rose petal aromas and fruity flavors was a pleasing match for the rich burrata cheese, the buttery polenta and the creamy soup. It was a lovely beginning to this grand dinner.
Also attending were winemaker Fidencio Flores of Esfuerzo Wine and film maker Alana Maiello of Esfuerzo Film, both of which were highlighted in the AltaMed Food and Wine Festivals.
The festival was a fundraiser for AltaMed, which provides quality health care to underserved

🍜 RECIPE ⛈️Chinese style mushroom noodle soup 👇 Soba noodle soups are one of my Top 5 favourite things of all time. This takes less than 25 minutes and always makes me feel so much better 🌽🌿🌶️ 🍄
400g buckwheat noodles + boiling water
1 tbsp coconut oil
Bunch spring onions, thinly sliced, save 2 for garnishing or 1 small red onion
1 thumb ginger, finely chopped
2 fat garlic cloves, finely chopped
500g mixed mushrooms, roughly sliced
2 star anise or 1 tsp chinese 5 spice
1 small broccoli including stalk, roughly chopped
250g green beans (I had these in the freezer ) or add spinach / cabbage
2 handfuls frozen sweetcorn
900ml quality vegetable stock or broth
2 tbsp tamari
Juice of 1 lime or 1/2 lemon
Sea salt and freshly ground black pepper
Optional - 2 tsp fish sauce
1 large handful of fresh coriander, roughly chopped
Chilli flakes/ fresh chilli .
✔️Fill a saucepan with boiling water and cook the noodles, until al dente, according to the packet instructions (about 5 minutes, instead of the usual 6–8). Then drain, rinse with cold water (to stop them cooking), and set aside. ✔️Put the same pan back on the hob, heat the coconut oil and fry most of the spring onions (reserving some for serving). Add all the ginger and garlic on a medium heat for 3 minutes, stirring from time to time. ✔️Add the mushrooms and fry on a high heat for another 4 minutes followed by the star anise, the veg and then the broth/stock. ✔️Let simmer on medium high for 5 minutes, lid on, until the greens are just tender. Add the frozen sweetcorn for the last minute. ✔️ Add the cooked noodles, stir then turn off the heat and add the tamari and lime juice + fish sauce if using. Season to taste. ✔️Divide between bowls and scatter over the fresh coriander, spring onions and chilli flakes.

Delicious Sweetcorn soup 🌽🍋🌶️
For those days when you miss soup 🍵 This just takes a quick blend with only few ingredients and is incredible. You can also warm it to about 42°C
For this soup to be delicious, the quality of sweetcorn is KEY. It should be organic, young, soft and sweet like if you bite into it raw you go OMG 😲 .
This soup ranks in my top favourites. If had regular access to good sweetcorn I would probably make this every week.

For 1 person. Cut off the kernerls of 1 or 2 sweetcorn cobs, drop in the blender, add 1 small handful of soaked almonds, 1tsp lemon juice, pinch of turmeric, himalayan salt and just a bit of water to keep it thick. Blend until creamy amd voila 😍😍
Add a pinch of cumin, white pepper and paprika for a Mexican touch 🇲🇽
