M I S O B R O T H 👊. After a week of effective but hideous antibiotic combinations for my poor smashed finger my gut is crying out for something soothing, wholesome and simple to digest. Courgettes, carrots and spring onions gently fried in a little oil until soft ish then add water and simmer gently. Cook noodles in a separate pan (cooking them in your broth makes it cloudy). Refresh under water then tip into broth when cooked. I added chopped form tofu which just needs warming through and the final step is to stir in a spoonful of miso paste. I used @clearspringuk brown rice miso paste. I made #broccoli and #cheese soup and used potato instead of cream or flour to get the thickness and consistency of the soup that I love. I also only used 1 cup of cheddar for the whole pot.. Sorry I couldn’t do it without cheese today 😂 #lunch#soup#healthy#food
Un bon repas d’hiver même si ce n’est pas encore l’hiver. En tout cas moi depuis 2 jours j’ai chopé un microbe et j’en suis bien dégoûtée. Il commence à peine à faire froid et je tombe déjà malade 🤒. J’essaye de me soigner tant bien que mal mais je crois que ce n’est que le début. Alors j’essaye de me réconforter avec un repas simple, léger mais qui fait plaisir car une bonne soupe, il n’y rien de tel pour faire du bien au corps, ce côté apaisant et réconfortant ça change la donne. Je vais faire ça plus souvent. Enfin je vais essayer de le faire sans être malade car ça par contre je m’en passerais bien. Soupe de légumes verts et crème de noix coco • yaourt végétal à la noix de coco • compote de pommes • confiture de framboise • cannelle. I chose this dish because it is a healthy and hearty one-pot meal which can be prepared and ready to eat in less than 30 minutes. I love fresh spinach and canned tomatoes, so I was super excited when I saw those in the bag. I like using mustard for homemade marinades and dressings but typically use plain mustard in my meals. I was somewhat intrigued as to how I could use the Greenridge Farm Red Jalapeño mustard in my dish. Also, I was not familiar with King Oscar mackerel canned fish and was a bit skeptical that the fish would not be substantial. However, I was pleasantly surprised when I opened the can and saw large chunks of the fish meat. And it tasted much better than expected! I was also worried it would be extremely fishy, but it turned out not be. I found it to have a smooth consistency with a rather zestful flavor.
