Aaj khao kuch sehatmand and yum
Weekend ke indulgence ko karo kum
Week ki shuruwaat ho jab aisi
Yeh thali hai healthy not aisi waisi !
Enjoy this healthy thali on this Monday afternoon which has protein rich Rajma (red kidney beans), papdi beans , and Sindhi style niji torai ( stir fried ridge gourd) Along with these are rotis, rice, homemade yogurt,onions, my beloved papad and oh so yum fresh homemade mango murabba ( my mom made this pickle!) Can the Monday blues please go away? There’s no room in this thali for them !!😂😅

.This thali is VEGAN except for the yogurt. It is GLUTEN-FREE except for the rotis.
. HOW I MADE THE NIJI TORAI : Niji means “on its own“. It has the veggie and no other heavy spices in this dish. It’s so simple. I washed, peeled and chopped torai/ridgegourd into small pieces . Then heated a tsp of oil( you can use ghee if you like) in a pan and spluttered cumin seeds! Added a crushed green cardamom pod . Then I added a chopped green chili along with the torai. Sautéed for a few minutes adding salt, black pepper powder and some ❤️. Then I covered and cooked it for a few minutes till done !! That’s it ! .
