The last 6 weeks have been pretty challenging trying to maintain a routine, whether it’s exercise, sleep, nutrition, work, holiday shopping, etc. After not eating a single veggie yesterday, I said enough is enough. I got up early, planned some healthy meals, made my grocery list, and shopped. Tonight’s meal is named “Gimmee Veggies Fried Rice” with some shrimp for good measure. It was delish! Here’s to hoping my planning will help me stay fueled and nourished all week, so I can survive the last week before winter break!
Food prepped for the week for a few hours with a few of my favorite ladies. Tonight's dinner of penne with roasted butternut squash and brown butter came from #RunFastEatSlow . Each time I make a meal from this book I think @elysekopecky and @shalaneflanagan are geniuses. This was no exception. SO GOOD!

🥗Quinoa Kale Salad🥗
▪️bushel of kale
▪️cup of cooked quinoa
▪️cup of feta cheese
▪️jalapeño peppers sliced
▪️1/2 cup of kalamata olives
▪️3/4 cup of olive oil
▪️1/2 cup of lime juice
▪️roasted pumpkin seeds
▪️season with salt and pepper
Not a completely wasted day: hearty minestrone soup with spicy sausage and white beans. Made it with a base of long run mineral broth and added chopped kale for extra calcium, iron and goodness. Enjoying with @eatbanza chickpea penne pasta. This should be called SUPERSOUP! 👍🏻👍🏻😋

Happy Saturday folks! Today, I had to wake up at 7 to go and get an MRI for my knee :(. After that, we came home and I whipped up this super cozy bowl of oats because it’s all rainy outside. Right now I can’t do anything because my cat is sitting on my lap, but later I’ll do some homework and go to the gym!
I also deleted the app that I use to track my food, because I’ve decided to take a stab at intuitive eating!!

It’s my 4 year old’s favorite dessert to help me make...probably because at the end I let her finger paint with any leftover chocolate. We then pop her finger painting into the freezer and you’ve got edible artwork! 🎅👩🍳
✨Pro tip - if you’re doubling this recipe, you need to continuously stir the chocolate as you’re filling the cups to keep the chocolate from separating. Also I love this 24-count @oxo mini muffin pan. We use it all the time for mini superhero muffins.
We may not have a Christmas tree, but baking some THICK chocolate chip cookie bars last night definitely got me in the spirit 🍪 🎄 I shared most of them because it’s the holidaze and who doesn’t love a good cookie? Finally got a chance to try out this super good flavor of @gtskombucha and I loved it. This is funny because the very first time I tried kombucha, which was over a year ago, I tried the GT’s cayennade flavor. Lemme tell u, that was a bad idea! I was traumatized lol.
However, I gave it a chance again a year later, and it was pretty good, so I drank it more and more often. I honestly think it’s kinda an acquired taste. 😂

The mind is so powerful! 😱My treadmill only says the MPH numbers not the paces for some reason, and I messed up by a freaking minute in the treadmill speed work tonight! Shows that the mind is powerful. It felt kind of hard at times for 2 mins at a time at that pace.... but I held that pace for 8 miles on Monday! Lol. (4x2) All just because I read my coach say it would be hard so I assumed it would! Crazy!

Easy lunch today: last of the Wild West rice salad that I prepped for the week from #runfasteatslow cookbook (wild rice, kale, carrots, edamame, green onions), baked tofu, cashews and a drizzle of homemade tahini dressing. A delicious way to celebrate being done with Fall 2018!

Every Sunday I meal prep a pan of roasted veggies in the oven it’s super easy and quick, but it also ensures that I have at least 4 healthy, nutrient dense lunches every week and I dont have to stress about it at night! Typically I pair this with pre bought grilled chicken breasts from @wegmans for protein, and microwaved sweet potatoes or garnet yams for some more staying power. However, I probably would never meal prep breakfast or dinner, because I like my variation within those meals! 😂

Race Ready Can't be Beet oatmeal. Skeptical at first with the beet root powder but you can hardly taste it. Added shredded coconut to recipe for that tropical feeling here in FL.

Turns out that the Super Hero Muffins from #RunFastCookFastEatSlow not only fuel your run with nutrients and energy, but also get you through long snow days! My kids were home Monday and Tuesday all day and had a 3 hour delay yesterday too 🤪Getting back to routine today!
I made my muffins vegan because of my son’s dairy and egg allergies (used @earthbalance and @bobsredmill egg replacer) and made the carrot apple version with raisins. They taste amazing!

One of my favorite recipes from my favorite cook book #runfasteatslow created by @shalaneflanagan @elysekopecky 🏃🏽♀️This is one of the very first recipes I made from this cook book, while making it I was skeptical of how’d the turn out.🌟They ended up being amazing and an easy breakfast for me the following week (because designated baking day is Sunday). There are a lot of ingredients that go into this recipe, it may be discouraging, but it’s definitely worth the time a effort👍🏼
Today, Katie and I unintentionally did a 5 mile tempo run increasing pace with each mile.🤩 We ran from the high school to Tokyo sushi and back (sadly didn’t get any sushi) It was the perfect temperature outside. We ended on a 7 minute split for the last mile.💨 Haven’t run that fast in a while... and ended with some strides on the track.
Meal prep doesn’t have to be overly time consuming or difficult. In just a couple of hours I have 10 meals for the week ahead, ready made! Skinny taste spaghetti squash, Run fast eat slow flu fighter chicken and rice stew, and emeril’s red beans and rice. #skinnytaste#runfasteatslow
Santa’s helper is busy stocking Presto Pesto in the freezer for the holidays! Pesto is my fave sauce to stash because its so versatile. For the holidays, it’s my go-to for last minute appetizers to serve to guests. I thaw it and serve as a spread with crostini or I whip it into a Pesto Yogurt Dip to serve with roasted cauliflower or crudite.
