Running is Meditation 🧘♀️👌 Just finished up my 7 mile run today & it has left me feeling relaxed & uplifted🌞 During my run today I thought about how lucky I am to be where I am in this moment. I have been obsessed with SSNB for months now! A client told me about it a couple of years ago but back then I got the wrong one (no sugar added) .
I recently gave it a second chance and got the one with sugar added and o my!! Life changer!!! I add it also to baked sweet potatoes when i am craving something sweet (which is all i ever crave 😁) and shabam!!! Craving solved!! .
I wonder which one u prefer 🤔 sweetened or unsweetened? Let me know! ❤️
6 very easy recovery miles yesterday + rest day today = very well rested body. Add in PTO spent with these two lovely kiddos and I have to say this is the best week in a while! :) (now if I can just get work to stop emailing me!! )

We’re making smoothie bowls over here too this morning but I doubt my photo will turn out this gorgeous! I never find drinking a smoothie satisfying enough for breakfast, smoothie bowls keep me full longer since you can top them with so much goodness. I also always stir oats into my smoothie bowls. Have you tried this recipe??

The thing I love most about our new cookbook are the inspiring stories that are woven into the book. And one thing you’ll notice if you look closely at the photographs is how much my body changed during the course of writing the book—this part I love because it shows how incredible a women’s body is when growing a tiny human (and it shows just how long it truly takes to write a cookbook!!)

In some of the photos in the book I’m in peak running shape just before I got pregnant, in some photos I’m 7 months pregnant and in some I’m 38 weeks pregnant (huge belly!), and in the photos taken in Shalane’s kitchen I’m just 2 months postpartum. I really loved my fuller figure and despite being sleep deprived, I embraced the chance to take these photos so soon after Ry’s birth to show women to love their bodies at every stage. It was also super special to have him tag along on his first trip for the photoshoot. And yes everything (well almost!) does go back to normal (eventually!) but if you want to nurse its important to not rush the process (which is why I’m still limiting my running miles right now at 11 months postpartum, Ry guy doesn’t want to wean!). #runfastcookfasteatslow#runfasteatslow

Experimenting with a recipe from#runfasteatslow - Spelt Banana Bread (muffin style). By “experimenting”, I mean, the lemon extract looks just the the vanilla extract. Very tasty variation, if I do say so myself. #baking#muffin

Wake up and smell the ginger molasses granola🥛🥄 I’ve been absolutely obsessed with @shalaneflanagan and @elysekopecky cookbook “Run Fast. Eat Slow.” since the day it came out a few years ago, and make this granola recipe of theirs monthly. I swap out the dried fruit that is called for in the recipe for cashews to add a bit more protein, and have it over vegan yogurt or with @ripplefoods pea protein milk. I’m just beginning to dive into their new cookbook “Run Fast. Cook Fast. Eat Slow.” and can’t wait to share what I whip up! I’ve really been struggling since #bsim2018 . I’ve been wanting to sit on the couch and eat Ben and Jerry’s. I’m so glad #runfastcookfasteatslow arrived because it’s given me a kick to start eating better. Thanks @elysekopecky and @shalaneflanagan ! I’ve gone a little crazy over the last few days filling my fridge and freezer. Some of my favorites so far:

The Slow Cooker Pulled Chicken paired nicely with the Sunday Sweet Potatoes and Roasted Brussel Sprouts (from the original #runfasteatslow ) over brown rice. And of course, I washed it down with a tall glass of Ginger Lemonade. First recipes from #runfastcookfasteatslow on the books! Slow cooker pulled pork with the purple cabbage slaw on the tacos. Cooked pinto beans in the slower cooker with the pork to go on rice as a side. Chocolate teff cookies from #runfasteatslow for dessert. Yum!

quickest little mix tonight: kale/spinach/broccoli protein whole wheat pasta (it sounds awful I know, it actually has a close to regular consistency of semolina pasta and barely tastes like veggies!) baby arugula, spinach, broccoli, avocado, salt & pepper and a drizzle of an olive/coconut oil mix 🌱
Late night meal prep for me and Ian 😍 I made the Recovery Quinoa Salad from #RunFastEatSlow . I threw in the little bit of leftover chicken we had from tonight because it wasn’t enough for a meal and would’ve gone to waste, and I also switched out kale for spinach cuz it’s what I had. Very excited for lunch tomorrow 😍
Sadly it there’s a ton of bullshit out there about how to feed the athletes body, training, and performance. This new book, however, is not part of that game. I was so excited to see that Elyse and Shalane discuss topics that are absolutely in line with a Health At Every Size mindset. They invite you to liberate yourself from diet culture and, instead, exhale in a life full of real food. As an athlete, a therapist, and one recovered from an eating disorder, I swear by real food in real portions.
After my copy of #runfasteatslow arrived, I set to making giant batches of brown rice, quinoa, and then this #vegan Thai #salad that actually tastes better the next day! Added in some snacks including the #pumpkin superhero #muffins , #vegan#raw picky bars and the most divine cashew butter that I just finished licking off the food processor 😂😋 (mine turned out a touch dry so I added more coconut oil and voila)! Can’t wait to whip up some sauces this evening for bowls. Also roasted Sunday sweet potatoes and cooked up some chicken for the power bowls to come. Thank you @shalaneflanagan and @elysekopecky Can’t wait to try more recipes! They all sound so amazing!

I have my last @5peaksrun on Saturday so I am working hard on my nutrition this week. @shalaneflanagan and @elysekopecky #RunFastEatSlow Oregon Summer Salad with grilled salmon and added beets for lunch all week, a meal plan for breakfasts and dinners and tonnes of prepped veggies and protein seasoned with @epicureofficial SPG and Fisherman’s Wharf Sea Salt so a quick healthy meal is easy to make. Add in some good tunes to prep to and my Monday is a success! .

Yes please! Curried sweet potato fries and cilantro-lime cashew sauce from one of my very favorite cookbooks, Run Fast Eat Slow by @shalaneflanagan and @elysekopecky.
These fries are actually crispy thanks to tossing them in egg white and olive oil prior to oven roasting them. OMG 😲 mouth watering deliciousness!
So as I told you all before, I was inspired to try a bunch of new recipes in @shalaneflanagan cookbook runfasteatslow, so I convinced my fam to have fish tacos for dinner! They were so good and I loved the mango salsa 👌🏼 check out their book for the recipe! I also made a “cowboy caviar” which is just tomatoes + black beans + corn + green onion + cilantro + lime juice. The combo of both salsas was amazing!! Really missing this meal rn. Unfortunately at camp the food isn’t as good as at home :/ can’t wait to make some good food when I get back!
Tried Shalane Flanagan’s and Elyse Kopecky’s Oregon Summer Salad With Grilled Salmon from their “run fast. eat slow.” cookbook and I loved every bite! I would definitely recommend purchasing their book for some tasty, healthy recipes!
