The last 6 weeks have been pretty challenging trying to maintain a routine, whether it’s exercise, sleep, nutrition, work, holiday shopping, etc. After not eating a single veggie yesterday, I said enough is enough. I got up early, planned some healthy meals, made my grocery list, and shopped. Tonight’s meal is named “Gimmee Veggies Fried Rice” with some shrimp for good measure. It was delish! Here’s to hoping my planning will help me stay fueled and nourished all week, so I can survive the last week before winter break!

My meal prep got a little crazy this morning!! Breakfasts (egg white frittata and superhero muffins), lunches (carrot soup with chickpeas, and lemon pepper tofu over veggies and rice), and most of our weeknight dinners (kale and edamame orange miso salad and sweet potato chickpea cakes - from the “Run Fast, Cook Fast, Eat Slow” cookbook! Also a veggie curry, and garden salad). Last week we hardly ate anything and if we did, it certainly wasn’t healthy. Happy Saturday folks!  Today, I had to wake up at 7 to go and get an MRI for my knee :(. After that, we came home and I whipped up this super cozy bowl of oats because it’s all rainy outside. Right now I can’t do anything because my cat is sitting on my lap, but later I’ll do some homework and go to the gym! 
I also deleted the app that I use to track my food, because I’ve decided to take a stab at intuitive eating!!

El desayuno del día.
Suelo ir variando de desayunos según lo que me apetezca al levantarme, a veces son gachas de avena, otras muesli, otras pan con jamón o pavo etc. Hoy tocaba batido proteico con corn flakes. - 40g de corn flakes sin azúcar (son de la zona bio del alcampo o del carrefour)
- 19g de proteína. Yo suelo comprarla en @bulevip_es , mi favorita es la de doble chocolate blanco de amix, whey pure)
- 1 plátano - unas moras (40g aprx)
- 200 ml leche de coco sin azúcar (la mía es marca Asturiana de la zona bio del @alcampo.es )

Bato la leche con la proteína, canela y casi todo el plátano (a excepción de los 5 trocitos que he echado al bol) y luego se la echo por encima de los corn flakes! 😊

Así hago un desayuno completo y equilibrado para aguantar sin problemas a la siguiente comida y no meter azúcares o grasas malas.

It’s my 4 year old’s favorite dessert to help me make...probably because at the end I let her finger paint with any leftover chocolate. We then pop her finger painting into the freezer and you’ve got edible artwork! 🎅👩‍🍳
✨Pro tip - if you’re doubling this recipe, you need to continuously stir the chocolate as you’re filling the cups to keep the chocolate from separating. Also I love this 24-count @oxo mini muffin pan. We use it all the time for mini superhero muffins.

Finally got a chance to try out this super good flavor of @gtskombucha and I loved it. This is funny because the very first time I tried kombucha, which was over a year ago, I tried the GT’s cayennade flavor. Lemme tell u, that was a bad idea!  I was traumatized lol. 
However, I gave it a chance again a year later, and it was pretty good, so I drank it more and more often. I honestly think it’s kinda an acquired taste. 😂

The mind is so powerful! 😱My treadmill only says the MPH numbers not the paces for some reason, and I messed up by a freaking minute in the treadmill speed work tonight! Shows that the mind is powerful. It felt kind of hard at times for 2 mins at a time at that pace.... but I held that pace for 8 miles on Monday! Lol. (4x2) All just because I read my coach say it would be hard so I assumed it would! Crazy!

Tortitas para nuestras merendolas!

Ingredientes (da para 2 raciones o más dependiendo de la comida en la que se meta)
- 80g de avena (he usado la de @clarou_es de natillas comprada en @bulevip_es )
- 80g de queso batido 0% del alcampo o aldi o mercadona.
- unos 2g de levadura
- 250ml de claras de huevo (he usado las de marca Pascual de @alcampo.es )

Batimos todo a mano (yo lo hago con un tenedor) y vamos vertiendo en una sartén engrasada con muy poco aceite para evitar que se peguen.

Yo lo hago en la vitroceramica a 6 o 6.5 y les voy dando la vuelta con una espátula de silicona

Every Sunday I meal prep a pan of roasted veggies in the oven it’s super easy and quick, but it also ensures that I have at least 4 healthy, nutrient dense lunches every week and I dont have to stress about it at night! Typically I pair this with pre bought grilled chicken breasts from @wegmans for protein, and microwaved sweet potatoes or garnet yams for some more staying power. However, I probably would never meal prep breakfast or dinner, because I like my variation within those meals! 😂

Race Ready Can't be Beet oatmeal. Skeptical at first with the beet root powder but you can hardly taste it. Added shredded coconut to recipe for that tropical feeling here in FL.

One of my favorite recipes from my favorite cook book #runfasteatslow created by @shalaneflanagan @elysekopecky 🏃🏽‍♀️This is one of the very first recipes I made from this cook book, while making it I was skeptical of how’d the turn out.🌟They ended up being amazing and an easy breakfast for me the following week (because designated baking day is Sunday). There are a lot of ingredients that go into this recipe, it may be discouraging, but it’s definitely worth the time a effort👍🏼

Today, Katie and I unintentionally did a 5 mile tempo run increasing pace with each mile.🤩 We ran from the high school to Tokyo sushi and back (sadly didn’t get any sushi) It was the perfect temperature outside. We ended on a 7 minute split for the last mile.💨 Haven’t run that fast in a while... and ended with some strides on the track.
