Warm #winter hugs in the form of #stews .
Boiling away to give us lots of love and comfort is this #vegetable , #chickpeas , and #chicken#stew . An absolute winner and super easy to make as well. Put in whatever vegetables strike your fancy and let it cook away at its own pace. The end result is a light, vibrant, fulfilling and immensely nutritious meal. It also gives the Indian in me a break when I’ve boiled chickpeas and don’t want to make the regular #chole .
In this stew I’ve got a handful of #potatoes (we’re not potato eaters as a family; the only exception being fries), #carrots , #broccoli , #mushrooms , #yellowpeppers , #greenpeppers , #redpeppers , and of course chicken and #chickpeas . :)

Empanadas and coca con pimiento rojo.
These are typical Meriendas (snacks) which you could grab from a bakery. The Empanada normally has pork inside, sometimes with peas (con guisantes) so it's not veggie friendly. The coca? Check with the bakery what is in the pastry as sometimes they make pastry with lard if you want to have vegan snack. A heads up though, there is another coca which comes with green chard on it ("Acelga") and it looks veggie BUT it has a lot of anchovies in it which makes it really salty and not veggie. So mind out. It gets me every time and it always ends up in the bin!

Healthy, filling and delicious dinner option!
Zesty Chicken Pita*
4 Grilled chicken tenders* (I seasoned mine with Mrs. Dash Southwest Chipotle flavor)
4 Tbsp hummus (optional)
1 medium avocado (optional)
1 c Fresh spinach, divided
1 Tbsp olive oil
1 ear roasted corn
1/2 15.5 oz can of black beans
1/2 c roasted red peppers
4 Tbsp shredded fiesta blend cheese (optional)
Sour cream (optional)
4 Joseph's Heart Friendly Pita Breads
Season chicken tenders with desired seasoning. Salt and pepper will be just fine. Grill either on a grill pan or outdoor grill for approximately 5 minutes per side or until all the pink is gone. Meanwhile, remove the corn off the cob and place in a non-stick pan with olive oil, black beans, roasted red peppers and heat through on medium low heat for three to four minutes. While that heats up, you can split your pita bread and open the pockets. I warmed my pitas on a cast iron skillet, but you don't have to. Next, spread one tablespoon of hummus OR avocado per pita. Then fill with 1/4 cup of spinach per pita. Now, fill each pocket with one chicken tender that's been chopped. Top with the corn, bean and pepper mixture. Add sour cream and cheese if you like.
