Tempeh Burgers loosely based off of Laura's @thefirstmess recipe. Until I found her recipe I could never get my veggie burgers just right and since then I've had so much success with all kinds of veggie burgers just by loosely following her method and it always seems to work. Thanks for being so brilliant lady.
On another note, our Canadian vacation is almost over and we're slowly trying to get used to the idea of going back home to Italy. So bittersweet because Canada has been home since my family first immigrated here many moons ago.
As anyone who lives abroad knows, it's never easy being so far away from loved ones. The busy-ness, daily routine and frequent video chats help soften the blow, but nothing can replace the live moments of togetherness, warm hugs and delicious meals shared in the company of those you love the most. Every year we talk about possibly moving back but then we settled back into our life and enjoy yet another mild Italian winter, but we never say never.
I’m Italian and it’s Sunday so here’s my twist on Sunday pasta night. Vegan cashew and kale pesto sauce from Trader Joe’s. So yummy!!! At the time I was caught up in a relationship that didn’t make me happy and had just scored poorly on my exam to get into medical school. I’ve held onto these words over the past four years and see daily how day my decision to become a doctor makes me the best version of myself. I see it in the people I choose to share my time and energy with. I see it in my food choices. Overall I am much more cognizant of my behavior. Caring for the lives of others is an enormous privilege. He wasn't well taken care of, he wasn't grazing In a fucking pasture somewhere, he was tortured and he was deprived and eventually he was murdered.
When I think about why I've gone vegan I see this baby in my head and I will never forget this baby's face until my dying day.

Finally got the chance to try out an @impossible_foods burger. They're 100% plant-based, and eating just ONE of these vs a regular beef burger saves 75 acres of land, half a bathtub of water, and 18 miles worth of car emissions. Pretty dang tasty too!
