October always feels like the best  month to start using squash in your recipes! We currently have a wide variety in store that can be used in this delicious recipe for Crispy Squash Pancakes (full recipe can be found on our website in the cookbook section).

Add 4-5 cups of grated squash, 1tbsp chopped fresh sage, 1/2 cup buckwheat flour, 1/2 cup almond flour, 2 eggs, 1 cup almond milk, 1tsp pink himalayan salt in a bowl and mix well. Using a tablespoon per pancake, fry in a little coconut oil and avocado oil until crispy (roughly 3 minutes each side). Sometimes we also like to add red onion and hazelnuts to the mixture (tastes just like stuffing!).

1/2 tsp dijon mustard
1 tbsp spice rub
1 tbsp barbeque sauce

🍴Preheat oven to 300F. Line a baking sheet with aluminum foil, and set a cooling rack on top.

🍴Brush the ribs with the mustard, then season with the dry rub. .
🍴Put the ribs onto the rack, and broil the ribs for about 5 minutes.

🍴Move the ribs to the oven and roast for 1.5-2 hours.
.
🍴After 45 minutes, cover the ribs with aluminum foil to prevent them from drying out.

🍴30 minutes before they are done cooking, brush the ribs with barbeque sauce.

Like many of us in the health and wellness world, I'm quick to sing the praises of nutrient-dense, traditional organ meats (also called, unfortunately, "offal"). But I'm less consistent about actually getting them into my diet. They taste funny, they require new preparations and cooking techniques, and you often have to go out of your way to find them. .
I've resolved to get them into my diet each week and I'm working on figuring out sustainable, delicious ways that works for me. One recent discovery was "lover's blend" from a local butcher, where lamb kidneys and heart are ground with beef. The result is delicious and mild-flavored, perfect for tacos or meat sauces. Another favorite is chicken liver pate, easy to whip up in batches. One trick I have yet to try is mail-ordered organ meat blends from @uswellnessmeats. I've been told their liverwurst is divine.

As for the kidneys? Well, these might not end up on menu repeat 😝  But based on the flavor, I more than satisfied my mineral needs for the foreseeable future!

The authors discuss childhood stressors and their association with IBS, overlaps between IBS and IBD, infections, the role of mast cells (which release histamine) and immune activation in IBS, as well as dysregulated adrenal function perhaps caused by systemic inflammation. 💩 .

Is this why in some instances healing is tricky? One theory the authors suggest is a course of gastroenteritis creates low grade systemic inflammation which creates disrupted HPA signalling (adrenal dysfunction) which may all give rise to an overall inflammatory phenotype 🤔

During my corporate talk last week, I explained how the pleasure neurotransmitters, serotonin and dopamine, illicit the same physiological response to drug use in a drug addict. Considering that 95% of our body's serotonin is produced in our gut, it's not surprising that food can be highly pleasurable and highly rewarding. In some individuals like myself, our genetics and brain chemistry make it so that we crave carbs daily or in sudden spurts. 🍔🍟🍕🌭🥪🌮🌯🍿🧀🥞
From an evolutionary biological standpoint, these cravings are an unavoidable, irresistible drive to pack on as much body fat as possible to increase our chances of survival during the coming long cold winter months. Our ancestors had no choice but to follow a low-carb diet during winters or dry seasons. Survival depended on successful hunts, fishing, and our own body fat stores. With our year-long access to carbs, winter never comes amd many of us turn to carbs as a source of comfort and safety.
