Gluten free orange chicken with cauliflower fried rice and steamed broccoli. Totally made this recipe up tonight bc I was craving Chinese takeout. I know I’ve been posting some gluten free recipes lately, but when I thought I might have gestational diabetes & took gluten out of my diet, I realized I digested things so much better. I still love bread and pasta, but every time I eat it I feel so bloated afterwards. So I’m kinda on the gluten free bandwagon now (at least 80% of the time). My rice looks a little weird bc I used purple carrots and it dyed the veggies. I really wish my hubs was off tonight bc this is one of his fav meals and I know this version would blow him away! Hopefully there are leftovers 🙃.. #likeafitgirl#fitpregnancy#orangechicken#glutenfree#fitpregnancy#womp#cleaneats
If you like orange chicken then you have to try this recipe! It takes a little time but it’s so worth it! 🍊 •••
2 chicken breasts cut into cubes
1/3 Tbsp. salt
1/2 c. cornstarch
1 1/2 c. flour
1/2 tsp. pepper
1-1 1/2 c. water
1 Tbsp. oil
Oil for frying
For the sauce:
1 Tbsp. oil
1/4 tsp. chili flakes
1 tsp. minced garlic
1/2 tsp. minced ginger
1/4 c. sugar
1/4 c. brown sugar
1/4 c. orange juice (I think fresh is the best)
1/4 c. vinegar
2 Tbsp. soy sauce
1 tsp. sesame oil
2 Tbsp. cornstarch mixed with 2 Tbsp. water
Mix in a bowl the salt, pepper, cornstarch, flour, egg, water, and oil until it makes a batter. Then add the cut up chicken and make sure each piece is covered in the batter. Cover and refrigerate for 30 minutes. Cook the chicken in hot oil for about 6 minutes until it’s a light brown color. Then move to a cookie sheet lined with paper towels. Then make the sauce. On medium heat cook the garlic, ginger, and chili flakes in the oil. Then add the sugars and orange juice. Add the vinegar, soy sauce, and sesame oil. Last, add the cornstarch mixed with water. Heat until the sauce starts thickening. Toss the chicken in the sauce and serve over rice. Enjoy!

This is so damn good!!! I didn’t measure but mixed some orange marmalade, balsamic, chicken stock and dried rosemary and poured over the pan sautéed chicken cutlets when they were almost cooked through and turned the heat down and let it reduce into a thick, sticky ass sauce. Served over rice and sautéed veggies. 🔥🔥🔥🔥 #dinner#orangechicken#healthyeats#chicken#veggies#quickdinners#delicious#chef
🍃Crock Pot Orange Chicken and Sweet Potatoes🍃
It's delicious! The Orange chicken is a perfect dinner and even more enjoyable with some sweet potatoes on the side. You can put your Crock Pot Orange Chicken over rice or just eat it with the sweet potatoes.
I made my Crock Pot Orange Chicken and Sweet Potatoes with almond flour, so if yours looks different it's probably because of the four. I have a daughter with stomach issues and so we try to accommodate her most of the time. However, you can use whatever flour you like.
Also, I am not a big fan of nutmeg, but it tastes amazing with the orange flavor. I love the combination of all the spices together! If you're not a big nutmeg fan, leave it out or only use a 1/2 teaspoon. Either way, I hope you enjoy it as much as we did! 😁

I don't know about you, but we are in super busy back-to-school mode right now. 📝 We're trying to adjust to the new schedule and keep our heads on straight between homework, signing up for after school clubs, forms, forms, and more forms, packing lunches, squeezing in doctor's appointments, etc --- so easy, healthy dinners are more important than ever right now. That's where this orange chicken salad comes in.
If you take the shortcut that I like to (buying an organic rotisserie chicken), this meal is ready in like 12 minutes flat! The longest part is stirring together the dressing ingredients. #winning
