Du benötigst für 3 Portionen:
250 g Reis ungekocht
250 g Stangensellerie 
200 g Karotten 
200 g Lauch 
100 g rote Paprika 
200 g Zucchini 
250 Champignons 
200 g Zuckerschoten
1 EL Sesamöl
50 g Sojasauce
1 Stück Ingwer 
1 Zwiebel 
1 Knoblauchzehe
Salz und Pfeffer
Paprika edelsüß 
Chilliflocken 👨‍🍳 .

Zubereitung: 
Reis nach Packungsanweisung im Topf mit Wasser weich garen.
Zwiebeln, Knoblauch und Ingwer klein hacken. Karotten, Paprika, Stangensellerie und Zucchini in Würfel, Lauch in Ringe, Champignons vierteln. Zuckerschoten am Stück lassen. Zucchini, Champignons und Zuckerschoten beiseite stellen.

Wokpfanne mit Sesamöl erhitzen und zusammen mit dem Ingwer, Chilliflocken, Knoblauch und Zwiebeln anbraten. Paprika, Lauch, Karotten und Stangensellerie bissfest auf mittlerer Stufe mit braten.

Jetzt die Zucchini, Zuckerschoten und Champignons dazu fügen und unter ständigem rühren weiter braten. Mit Salz, Pfeffer, Paprika edelsüß und Sojasauce abschmecken. 
Zum Schluss den abgekochten Reis zu dem Gemüse in die Pfanne geben. Eventuell nochmal mit Gewürzen und Sojasauce abschmecken 😍😀. .

really tho, can’t stop making soups. made up this pressure cooker curry veg soup as I went on my IG story today. if you need help using your @mealthy, @instantpotofficial, or other pressure cooker, give it a watch. stovetop and pressure cooker directions below:

COCONUT CURRY WINTER VEGETABLE SOUP

makes 6 servings

1 tablespoon unsalted butter
1 small yellow onion, diced
4 garlic cloves, roughly chopped
2 heaping tablespoons red curry paste 
3 pounds root vegetables (carrots, parsnips, sweet potatoes, turnips, etc.), peeled and cut into 1-inch pieces 
1 quart chicken or vegetable stock
1 tablespoon soy sauce
2 teaspoons fish sauce
1 teaspoon ground turmeric 
1 teaspoon ground cumin
Pinch red pepper flakes 
1 (15 ounce) can coconut milk
1 tablespoon rice wine vinegar or lime juice
Optional: cilantro

PRESSURE COOKER DIRECTIONS:

Turn pot on sauté mode. Melt butter. Add onion and cook until softened, 2 to 3 minutes. Add garlic and curry paste and continue cooking for 30 more seconds. Turn Sauté mode off.

Add vegetables, stock, soy sauce, fish sauce, turmeric, cumin, and red pepper flakes, stirring to scrape up any bits that are stuck to the bottom of the pot. Close lid and turn steam valve to Sealing. Pressure cook on high for 10 minutes. Quick release the pressure by turning the steam valve to Venting.

Remove lid. Blend with an immersion blend, or wait until it cools a bit and transfer to a blender. Blend in coconut milk and vinegar. Taste. Veggies have varying levels of sweetness/earthiness, so you need to taste the soup and see if it needs more salt (add more soy sauce or fish sauce!), acid (add more vinegar or lime juice!), or heat (add more red pepper flakes or even some sriracha). Garnish with cilantro and enjoy!

Chicken & Rice....oh so nice 🤤🤤🤤 Real talk, there have been versions of chicken & rice in almost every culture for centuries. This dish is an underrated gem.

Ingredients:
1.5 C Rice 🍚
3 C Chicken Stock
3 Peeled Carrots 🥕 
2 Stalks Celery
2 Shallots
3-4 Cloves Garlic
^^^^^ Chop above veggies 
Bone in Skin On Chicken Thighs 🐓
Sprigs Thyme, Bay Leaf 🍃
Salt, pepper, paprika, onion powder to taste🧂

Season chicken thighs liberally and sear in hot heavy bottomed pan (Dutch oven or cast iron pan, make sure a lid fits it for later). Remove chicken from pan and sauté veggies for 2-4 minutes. Add rice and mix around for 1-2 minutes until coated in fat. Add chicken stock and nestle browned thighs in mixture. Add thyme sprigs and bay leaf. Cover and bring to boil. Reduce to simmer for 20 minutes or until rice has absorbed all liquid. .

Rinderhackfleisch-Gemüsepfanne mit Vollkornmakkaroni und Sauerrahm 🤤
Mir hat's auf jeden Fall sehr gut geschmeckt 👌
Tipp: Nach dem Essen schnell umfüllen und in den Kühlschrank stellen, damit man nicht weiternascht ☺️ (meine Schwäche) 
Zutaten:
-500g Bio-Rinderhack
-Bund Lauchzwiebel
-1 kleine Zwiebel
-je 1 EL Tomatenmark und Senf
-Schubs O-Saft

Alles kurz scharf anbraten und mit O-Saft ablöschen, Hitze reduzieren. -250 g Vollkornnudeln nebenbei in Salzwasser kochen -2 Möhren, geraspelt
-1 Zucchini, in Scheiben
-Kräutersalz, Pfeffer
-Thymian, Oregano

Hinzufügen, wenige Minuten garen.
Nudeln abgießen, dazugeben. -1 EL Saure Sahne 10% Fett
- Paprika Pulver

Serves 4-6⁣⁣
Ingredients 🛒 ⁣⁣ ⁣⁣
750g piece of smoked pork belly⁣⁣
2 large carrots, peeled and cut in half⁣⁣
3 sticks of celery, cut in half⁣⁣
2 onions, peeled and quartered⁣⁣
¼ tsp black peppercorns⁣⁣
½ tsp caraway seeds⁣⁣
4 bay leaves⁣⁣
3.5 litres chicken stock⁣⁣
150g spelt or barley⁣⁣
400g sauerkraut⁣⁣
A scattering of roughly chopped fresh dill⁣⁣ ⁣⁣

Simply put all the ingredients except the spelt, sauerkraut and fresh dill in a large pot.⁣⁣

Bring up to simmering point.  Cover loosely with a lid and let it bubble gently for 1 hour or until the pork belly starts to break apart with a little tug with a fork. This may take a little longer depending on your pork.⁣⁣

Using a large fork, remove the pork belly. Peel away the skin (or use a knife) and then roughly chop up the meat. ⁣⁣
.⁣⁣
Return the meat to the pan along with the spelt (or barley) and cook for a further 20 minutes until the grains are cooked.⁣⁣

Remove the celery and carrots and cut into smaller chunks.  Put back in the soup⁣⁣

Stir in the sauerkraut. Bring back to the simmer.⁣⁣

Serve sprinkled with fresh dill.  So delicious, simple, warming, economical & NOURISHING 😃⁣⁣ .⁣⁣

Eintopf, oder Neudeutsch auch One Pot! Und tatsächlich habe ich auch nur diesen einen Topf benötigt! 
Warum das Ganze? Heute ist der erste Schnee❄️ gefallen und daher ist es spätestens jetzt allerhöchste Zeit um die Eintopf Saison zu eröffnen🙂
Das habe ich zum Anlass genommen um mit einem Chili Chicken Eintopf zu beginnen.
Neben drei verschiedenfarbigen Paprika, Champignons, Tomatenwürfeln, Kartoffeln,Petersilie, Zwiebel und Lauch, ist natürlich auch das Namensgebende Chili und Hähnchen mit drin. Verfeinert und abgerundet habe ich es mit diversen Gewürzen und Creme Fraiche. Also alles drin was ein stabiler Eintopf so braucht! 
Da interessiert mich das schlechte Wetter nicht mehr🙂

this week for my *dinner in a hurry* series I’m showing you how to cook TWO MEALS using ONE large ingredient that two people wouldn’t be able to use all in one meal. first up: butternut squash! this ONE-POT BUTTERNUT SQUASH PASTA is truly a masterpiece. the lemony, garlicky, buttery, parmesany sauce is the perfect compliment to the sweet squash. plus you truly only dirty one cutting board and ONE POT in the making of this meal 💥 look out for the next butternut squash recipe on wednesday!

ONE-POT LEMON GARLIC BUTTERNUT SQUASH PASTA

Serves 2 hungry eaters

1/2 pound linguine or spaghetti
1/2 pound butternut squash, 1/2-inch cubed
1/4 cup thinly sliced sun-dried tomatoes (optional)
1 large shallot, minced
4 garlic cloves, thinly sliced
1 teaspoon salt
Pinch red pepper flakes
2 1/4 cups chicken stock
Juice of 1 large lemon (at least 2 tablespoons, use 2 lemons if your first one doesn’t seem juicy)
1/3 cup finely grated Parmesan cheese, plus more for garnish
1/4 cup finely chopped parsley
1 or 2 tablespoons unsalted butter (the more the better but like #health)
Lemon wedges, for serving

Place pasta, butternut squash, sun-dried tomatoes, shallot, garlic, salt, red pepper and chicken stock in a large straight-sided skillet. If the pasta doesn’t fit perfectly, don’t break it! Once it cooks a bit it’ll bend and fit down into the pot.

Turn heat to high to bring stock to a boil. Reduce to medium-high and continue cooking, stirring and turning pasta frequently with tongs, until pasta is al dente and there’s just a bit of stock left, 9 to 12 minutes. Remove skillet from heat.

Toss in lemon juice, Parmesan, butter, and parsley. 
Serve immediately, with a lemon wedge.

Helpful hints:

I know 1 pound of pasta is technically 8 portions but I mean let’s be serious.

An average butternut squash yield about 3 pounds of usable squash, and most grocers carry pre-cut squash that will work perfectly here in 1 or 2 pound bags.

I was originally going to stir in a few tablespoons of pesto at the end, but I ended up going with this simpler lemon-garlic-butter sauce. That being said, if you’re into pesto pasta, it would be delicious here!

I’m lucky to live in an area full of Eastern European shops selling lots of smoked pork products.⁣

This 750g piece was a steal at £3.50. After some long slow cooking this should impart its flavour on the broth and break up into the soup.  I’m also adding spelt to thicken it slightly although you could use barley. ⁣

Making a warming sauerkraut soup with smoked pork belly and spelt/barley. ⁣ .⁣ I’m lucky to live in an area full of Eastern European shops selling lots of smoked pork products.⁣ .⁣ This 750g piece was a steal at £3.50. After some long slow cooking this should impart its flavour on the broth and break up into the soup. So I don't know about anyone else out there but during my period I can hardly eat, my appetite is always so affected by it, like last night all I was craving was some acorn squash...I went through all the preparation and cooking before I had my first bite and felt so sick I had to put it away 😓 which takes me to breakfast today! I roasted the squash with some veggies so I started with frying up some extra garlic, onion, potatoes mushrooms and peppers 😋 I added the squash and leftover veggies from last night, added some nutmeg, cinnamon, ground ginger, paprika, salt and pepper, fry it up until all the flavours are cooked in. Seriously this is so good, the warmth and spices are perfect for this cold weather and I love more meal style dishes for breakfast, I never was one for oatmeal or fruits in the mornings anyway 😁

I ALMOST followed the recipe to a T except a few things 😋:
- Couldn’t find andouille sausage, used Portuguese sausage instead
- I use Celtic Sea Salt. It’s uniodized, unbleached, just awesome quality stuff. (You can get it at Whole Foods, Down To Earth, or Amazon)
- Didn’t have chicken broth, used #BetterThanBouillon Vegetable Base (I posted a pic of the product on the third photo. You can get it at Safeway, Walmart, Target, Amazon)
- didn’t have bay leaves, thyme; cooked without it
- Used Jasmine Rice
- Added mushrooms; same time as shrimp after quick release
- Added Chinese parsley at the end after quick release
- Garnish with more Chinese parsley
- Read the discretion at the bottom of the recipe’s webpage. Some Instant Pots are prone to the Burn Error so she mentions the order of putting the cooked ingredients in before pressurizing (like, don’t mix the ingredients at the end before putting the lid on.)

This came out so delicious!! I loved how this came out like half gumbo/half jambalaya. Bruuhhhhh so perfect for this chill weather. Come join me ya’ll. •

Spanish Style Chicken Bake🐔🥒🍅😋
Ingredients: (serves 4)
• 1 red onion, cut into wedges
• 500g new potatoes, quartered lengthways
• 4 garlic cloves, left whole
• 10 cherry tomatoes
• 75g chorizo, skinned and thinly slices
• 8 chicken thighs, slashed three times across the top
• ½ tsp paprika
• ½ tsp oregano
• 1 green pepper, thinly sliced
• 1 courgette, thinly sliced

Method:
Heat the oven to 200c/gas6
Put the onions potatoes and garlic in a large oven proof dish and roast for 20 minutes
Remove dish from oven and add the tomatoes and chorizo stir well then place the chicken on top and sprinkle with the paprika and oregano, return to the oven for 20 minutes
Remove from oven and add the pepper and courgette and put back in the oven for another 20 minutes until the chicken is cooked and the pepper and courgette are just soft.

Risotto is a lot of hands on cooking but is v easy and delicious. .

First everything get browned and toasty in the pot. Chicken, sausage, onions, and rice with a Cajun seasoning blend. See that burnt layer on the bottom of my pot - that’s no worries. That’s flavor. .

Then add small amount of beef both and stir until all liquid is absorbed, repeat until rice is al dente and creamy and wonderful full. DONT FORGET TO STIR - that releases starches and makes the creaminess you want. For real you have to stir the whole time. .

Then add peas and Parmesan to the whole thing.  I served my jambalaya risotto with roasted butternut squash and onions. Yum. .

I used brown rice which is the least traditional thing - but I forgot to get some white rice 🤷🏼‍♀️ I also changed the ratios up a bit - more protein less rice. Annnnd I used just turkey polish sausage and not andouille because aldi doesn’t carry andouille.

Jambalaya Risotto . . Risotto is a lot of hands on cooking but is v easy and delicious. . . . First everything get browned and toasty in the pot. Chicken, sausage, onions, and rice with a Cajun seasoning blend. See that burnt layer on the bottom of my pot - that’s no worries. That’s flavor. . . Then add small amount of beef both and stir until all liquid is absorbed, repeat until rice is al dente and creamy and wonderful full. DONT FORGET TO STIR - that releases starches and makes the creaminess you want. For real you have to stir the whole time. . . . Then add peas and Parmesan to the whole thing. I used brown rice which is the least traditional thing - but I forgot to get some white rice 🤷🏼‍♀️ I also changed the ratios up a bit - more protein less rice. Ihr braucht dafür: -500 gr Hack (ich hab Rind genommen)
-2 El Tomatenmark
-500 gr Kartoffeln
-2 Paprika
-4 Möhren
-1 Zwiebel
-2 Knoblauchzehen
-1 Packung passierte Tomaten
-300ml Brühe
-Paprikapulver (rosenscharf)
-Salz & Peffer
-Creme Fraiche

Kartoffeln, Möhren und Paprika in Mundgerechte Stücke schneiden, Zwiebeln und Knoblauch würfeln. 
Das Hack krümmelig anbraten, dann Tomatenmark , Zwiebeln und Knoblauch dazu und auch etwas anbraten. Dann gebt ihr Paprika, Kartoffeln, Möhren, Brühe und passierte Tomaten in den Topf. Dies einmal aufkochen lassen und dann 40 Minuten ca mit geschlossenem Deckel köcheln lassen. Dann die Gewürze nach Geschmack dazu geben und nochmal 10 Minuten ca ohne Deckel kochen, bis die gewünschte Konsistenz erreicht ist. Beim servieren dann noch Creme fraiche hinzugeben.
